Perfect on a rainy evening with a warm cup of tea! This would come under regional cuisine I suppose because it is something that you would only find in a Bihari or Bengali household.
You wouldn’t even find this in the restaurants in Bihar and Bengal. Only in households. This recipe has been passed down to me by my mother. After years of trials, I have now perfected it! Hope she is proud of me. I am very proud of me! 😜😂(patting my back)

That’s how we know we are home! Have been missing these for the last 3 years. Only my mum makes it right. “Maacher jhol” without maach. ( fish curry without the fish) she replicates the exact flavor without killing a soul. Beginning to realize I have more Bengali blood in me than I thought!
That’s a complete meal. Has carbs + protein + vitamins + amino acids.
Can’t wait to have it again!

Sometimes I think, oh I wish there was someone to try this delicious food but then I think, thank god there is no one to try, all this delicious food is for me alone! 😂 plant based Thai green curry.

Not just indian food but the entire food culture is such that it provides every bit of nutrition needed for a particular time of the year through different festivals and rituals and food that is staple during that time. Not just that...they also know how to make it delicious so we want it more and more and look forward to it every season.

Classic bruschetta! Before we get to the recipe, did you know, there are about 150 varieties of basil. In India, the most common one is the 'tulsi' aka the holy basil, which has a lot of medicinal properties. It is highly recommended by ayurveda as well . The basil grown in Europe however has culinary uses and this beauty in the picture is made using the Mediterranean basil. I wonder what it would taste like if we make it with tulsi. 🤔 Very strong I guess! I'll have to try to be sure! Anyway, let's get to how we make this:
3 big ripe tomatoes
2 handfuls of basil leaves
1 clove of garlic
1 teaspoon of balsamic vinegar
2-3 tablespoons of extra virgin olive oil
Salt & pepper to taste
Any Italian bread if your choice
I used 1/4th of a small red onion as well but that's optional.
Cut everything finely. Let the water from the tomatoes drain out. Mix. Let it sit for sometime so that the flavours blend in. Toast the bread & serve!
I just added some avocados as well because an avocado a day is recommended for vegans for all the good fat.
