π’ Easy Green Thai-Style Soup ππΏ
Ingredients:
1. 1 tablespoon oil π’οΈ
2. 1 cup coconut milk π₯₯
3. 2 cups vegetable or chicken stock π²
4. Β½ cup mixed vegetables (carrot, beans, bell pepper) π₯π«
5. 100 g mushrooms π
6. Β½ cup fresh coriander leaves πΏ
7. 2 green chillies πΆοΈ
8. 3β4 garlic cloves π§
9. 1 teaspoon grated ginger π«
10. Salt to taste π§
11. 1 teaspoon soy sauce π±
12. A little lemon juice π

Grind coriander leaves, green chillies, garlic, and ginger with a little water into a smooth paste πΏπΆοΈ. Heat oil in a pan and sautΓ© this green coriander paste until aromatic π. Add coconut milk and stock, stir well, and bring to a gentle boil π₯₯π². Add vegetables and mushrooms, cook until tender π₯π. Season with salt, soy sauce, and lemon juice π. Switch off the heat and serve hot πππ.
