On cold winter mornings,when the call for dawn prayers are heard,men wrapped in Kashmiri shawls and fez caps huddle out into the lanes and bylanes of purani Dilli's Ballimaran and Chitli Qabar.
Once they have bowed to the Almighty and sought forgiveness and prayed for their desires to come true,they pile out of the prayer houses and head straight to the Nihariwales,who sit stoutly in their tiny cubbyholes of shops with huge copper Cauldrons,doling out the magical stew,Nahari,bewitching all who pass by with its rich aroma.
Cooked overnight with spices, help keep the body warm and the added bones and marrow work as energy providers.
Tearing off thick Khameeri rotis and soaking in the aromatic shorba (gravy) alongwith the soft shank meat,garnishing with coriander leaves,green chillies,ginger juliennes and a dash of lime is all that is required to begin the day.
A legacy introduced in the 18th century during the last days of the Mughal Empire for the labour class,soon found a place on the royal Dastarkhwans of Shahjahanabad.
