Red Sauce Pasta

Boiled pasta cooked with red sauce and some vegetables. You can avoid vegetables if you don't have required one during preparation.
Servings - 3
Time - 15 to 20 minutes
Ingredients -
Pasta - 200 Grams or 1 medium size bowl
Vegetables - Mushrooms, Capsicum, Broccoli, Black Olives
Onion - 1 Medium Fine chopped
Tomatoes - 4 Tomatoes Fine Chopped
Garlic - 4 pieces (Chinese Garlic) 10 to 11 pieces(Indian Garlic) Fine Chopped
Chili Flakes - 1 Tspn
Herbs - Mix herbs or Oregano, Basil, Parsley ( Dry or Fresh)
Black Pepper - Black pepper powder
Salt - As Per Taste
Cheese - As per your choice
Procedure -
Boil water in a pan and add some salt. Water should taste salty.
Add Pasta in boiling water and do not add oil like we add in noodles. Mix it. Let it boil for 15 minutes
Take a pan and add olive oil. I use to prefer olive oil. You can use other refined oil.
Add fine chopped garlic and sauté it for one and half minute. Do not allow it to get brown. Add Onions and sauté it.
Add Chili flakes, mix it well and sauté it for two minutes.
Add Chopped tomatoes in to the pan and mix it well. Cook it for two minutes. Grind whole mixture to a fine paste and add it again to the pan.
Add Salt, Black pepper, as per taste oregano, basil, parsley or you can add mix herbs. Mix it well.
Covered it with a lid and cook it for 10 minutes. Meanwhile sauté diced mushrooms, capsicum, broccoli for 2 or 3 minutes in a another pan on high flame.
Remove lid after 10 minutes, add drained pasta, vegetables and mix it well. Cook it for 2 more minutes.
Add some cheese and mix it.
Enjoy it.

Poha - Maharashtran Style Cooked By Lohit Seth
Pohe(Flattened Rice) is cooked with lightly fried mustard seeds, turmeric, green chilli, finely chopped onions and
then moistened pohe is added to the spicy mix and steamed for a few minutes.
Ingredients
Servings - 2
Pohe - 2 Cups
Green Chili - 2 Splitted half into two pieces
Turmeric - 1/4 Tspn
Onion - 1 Big onion - Fine chopped
Peanutes - Half cup
Mustard Seeds - 1 Tspn
Salt - As Per taste
Green Cardamom - 1
Curry Leaves - 10 to 12
Asafoetida - 1/4 Tspn
Lemon - 1/4 Piece
Green Coriander
Procedure -
Soak Pohe for two minutes in water and drain it. It will be wet and soft.
Take a pan and add 2 - 3 spoon oil.
Add mustard seeds. Wait till it stops popping
Add Asafetida, curry leaves, 1 cardamom and mix it for half minute
Add fine chopped onion, gren chili and peanuts. Sauté it for two minutes.
Add turmeric and mix it well.
Add Pohe, Salt, Mix it.
Cook it for 1 to 2 minutes.
Serve it hot. Put some fine chopped green coriander and namkeen on it. Squeeze lime on it.

Ingredients
> Whole wheat Flour - 2 Tablespoon
> Sugar - 3 Tablespoon (Depends more on your taste)
> Water - 1/4 cup
> Ghee Leftover (Stuff left after making Desi Ghee from Malai)
> Desi Ghee - 1 Tablespoon
> Dry Fruits - Garnish / Taste
Preparation Method
> Take a frying pan and heat ghee leftover and desi ghee on medium flame. Add whole wheat flour into the pan and mix it well so that lumps do not form. Stir it and cook gently for 3-4 minutes.
> Now add water and stir it for 1-2 minutes, then add sugar.
> Garnish with chopped nuts.
