The start of mango season has Aamra HQ buzzing.
There’s movement everywhere, but somehow we’ve settled into an aam-azing rhythm.
Fresh raw mangoes arrive from our farm partners, are washed, scrubbed clean and laid out under the sun to dry. Then begins the real work - chopping, grating, blending and slowly turning traditional recipes into jars full of magic.

Behind the scenes of our mango pickle madness!
It all begins on our terrace, where you will find rows and rows of raw mangoes drying under the summer sun.
But sun-drying isn’t just tradition. It’s technique. It reduces moisture and spoilage, helps the mangoes absorb flavour better and intensifies their delicious tanginess.

What was June like at Aamra HQ?
If we had to describe it as a colour, it would be green. If we had to describe it as an aroma, it would smell like summer. Because this month was all about raw mangoes.
From sourcing the freshest produce from our farm partners to turning them into traditional pickles and regional chutneys, June was a season of peeling, chopping, mixing and preserving.
And honestly? We wouldn’t have it any other way.
