INGREDIENTS:
1 ½ cups chopped beetroot
3/4 cup chopped carrots
1/2 cup chopped potatoes
2-3 slices of bread
½ cup oats
Seasoning:
3-4 tbsp chopped coriander
1 chopped green chilly
½ -1 tsp salt
½-1 tsp red pepper
½ tsp grated ginger
½ tsp black pepper
½ tsp cumin seeds
½ tsp powdered jeera
½ tsp chaat masala
½ lemon juice
METHOD:
● Peel and chop beetroot, carrots and potatoes. Pressure cook them on low flame for 8-9 whistles or cook in a rice cooker for around 30 min.
● Grind oats and bread separately and keep aside.
● Mash the boiled vegetables in a large bowl
● Add all the seasoning and lemon juice. Mix well
● To bind, add ground oats and bread.
● From the mixture, make the patties of desired size. You can roll in some sesame seeds if desired.
● Heat a non-stick pan, add a tbsp of oil and cook the patties onmedium high flame for a min. and then reduce to medium low flame and cook for 5-6 min.
● Flip the patties and add some oil and let it cook for another 7-8 min or till done.
To Serve:
1) This Will taste amazing with a mustard-based mayo dip (mix half a spoon of mustard powder and a pinch of salt in plain mayo and let it stand for few hrs, then use)
2) Use as a sandwich filling, or pair with a burger bun or wrap along with a crunchy salad made of shredded onion, capsicum and carrot.his snack can be served as a wholesome meal.
3)Also, can be served as a chaat item by topping it with green and tamarind chutney, chat masala and bhujiya sev.
Useful Tips:
1) We can roast the mashed veggies on a non-stick pan for few minutes for the excess water to evaporate, hence needing fewer slices of bread. Let it cool down and then use
2) For gluten free version, use roasted chana or sattu powder to bind.
