From the royal kitchens of Rajasthan to our training labs at NFCI Bathinda—Gatta Curry is a true reflection of tradition, taste, and resourcefulness. 🌿

Born in the desert lands where fresh vegetables were scarce, this iconic dish was created using gram flour (besan), turning simple ingredients into a rich, flavorful curry loved across generations.

Our students at beautifully recreated this heritage dish, keeping its authentic flavors alive while mastering the art of traditional cooking.

Recipe (Short)
Besan dough is shaped into rolls, boiled, sliced into gattas, and then cooked in a spiced curd-based gravy.

Ingredients
Besan (gram flour), curd, turmeric, red chili, coriander powder, garam masala, oil, salt

Chef’s Tip:
Always cook the curd gravy on low flame to avoid curdling and get that perfect creamy texture.
