🎉It's blackberry season

If and when you can, using local in-season ingredients is always the best option and at this time of the year no one is too far from a Blackberry Bush, they are everywhere so get out and get picking, this is a great way to get kids involved in cooking, they love being able to pick the berries and then use them in their baking

BLACKBERRY, LEMON AND COCONUT LOAF

Ingredients

90g desiccated coconut
175g self raising flour
½ tsp bicarbonate of soda
175g golden caster sugar (normal caster sugar is fine either)
175g butter (must be soft)
2 eggs
zest and juice of 1 lemon
1 tsp vanilla extract(optional)
150g blackberries
– at this time of the year you can find blackberries in hedges all over the country – try to pick ones that are not on a road and don't pick them all from the same place, leave some for the birds!

Equipment – 2lb loaf tin or 8” cake tin, mixing bowl

Method:

1. Preheat oven to 180C
2. Cream together the butter and sugar
3. Add in the eggs and vanilla extract and mix through until combined
4. Fold in the flour and bicarbonate of soda, don’t overmix
5. Fold in the coconut (keep 1-2 spoons out for later) and the juice and zest of 1 lemon
6. Carefully and very gently fold in the blackberries, you don't want to mush them all up!
7. Transfer into pre lined tin and sprinkle the top with the remaining coconut
8. Bake at 180C for 40mins approx, until skewer comes out clean
9. When cool sprinkle with some icing sugar

Bacon and Cheese Potato Waffles

I saw make these ages ago and had to try them, mine didn't work out at the start, probably because I just went with my own measurements 🙈 Got there in the end and they were gorgeous. These are a great way to use up leftover mashed potato.

Ingredients

Bowl of cold mashed potato
handful chopped cooked smoked bacon
handful grated cheese
4 tbsp flour
1 egg
salt and pepper

*you can swap the bacon and cheese for anything you like, have since made some with black pudding and chili and other ones with smoked salmon and chives

Mix everything together in a bowl, the mixture needs to be quite dry, not sticky at all, this is where I went wrong at the start, didn't add enough flour and they kept sticking🙈 4 tbsp worked perfectly

Spray the waffle maker with oil and fill with potato mix, leave for 8-10mins without opening

Voila, homemade potato waffles

Crispy Parmesan Potatoes

These are so good, they were gone in about 30 seconds in my house.

Ingredients
1 bag baby potatoes
Olive oil
Parmesan
Salt and pepper

Mayo
Sweet chilli sauce

1.Cook the baby potatoes in some water until just soft

2.When cooked, cut in half, drizzle some olive oil on a lined baking tray, grate loads of parmesan on top, lay the potatoes cut side down on top and brush the tops with a little more olive oil.

3. Bake at 180C for about 20-25 mins, until crispy.

4. Mix some mayo and sweet chilli sauce to make a dip but you could do a garlic/herb one either.

This delicious Goats Cheese Salad is so easy to make and so tasty.

Pop you favourite Salad leaves on a plate, add some sliced cucumber, halved grapes, chopped beetroot and toasted walnuts.

Top this with your warm goats cheese (I just popped it under the grill for a few mins), drizzle with balsamic and voila!

Anyone planning drinks and nibbles this evening?.....This is a really easy idea instead of buying crackers.....it's also a perfect way to use up a bagel that is gone slightly stale.

Cut a bagel into discs, add 1tsp each of garlic powder, onion salt, smoked paprika and parsley (you can add any combination of seasonings you like), drizzle with Olive Oil and pop into the air fryer at 190C for 4-5 mins, until crispy. Serve with dip/hummus or use as little crackers for cheese/paté

Hands up if you want a really easy pasta salad recipe🙌🏻

These type of salads are great to make in the warmer weather🌞 They store really well for a couple of days so can be made in advance, they are really filling as a meal on their own or perfect as a side to fish, chicken and all your summer bbq recipes. The added bonus with this recipe is that it make a perfect lunchbox filler too, so make sure you make loads.

Here's how ➡️

First for the dressing👇🏻
1/2 cup Olive Oil
3 tbsp white wine vinegar
1 tsp dill
1 tsp basil
1 tsp oregano
1 tsp Dijon mustard
1/2 tsp garlic powder
pinch salt and pepper

Mix all the ingredients together in a bowl/jug, this dressing will keep in a sealed jar in the fridge for a couple of weeks so make extra and save for other salads.

Cook the pasta according to packet instructions, when its done, drain off the water and run the pasta under cold water for 30-60seconds until its cold, this will rinse away any excess starch and stop it from sticking together.

Add the cold pasta to a large bowl, add in chopped cucumber, tomato and spring onion, crumble over some feta cheese and add a large handful of rocket, finally drizzle over the dressing and mix it all up.
