It's so important to offer a healthy filling lunch. It's the time of day that I get the best food into my toddler, dinner is hit and miss with the veggies!

This is a lovely recipe and one I've wanted to try for some time. ๐Ÿ˜

It's from the cookbook a gorgeous book for babies from weaning age.

It is gluten and wheat free using milled flaxseed and ground almonds. These packs a protein punch and are super for growing bodies.

I swapped the coconut oil for butter and it worked out fine.

My 5yo and I really enjoyed these with cream cheese and cucumber. My fussy toddler had his with butter and jam, and wasn't so keen on the savory offerings! (Btw...I don't call him fussy to his face ๐Ÿ˜‚)

I think itโ€™s safe to say that things are a bit scary at the moment. While it definitely has been challenging minding two children throughout the Pandemic, particularly during lockdown I am so grateful to my boys for forcing me to be present. I try to just hold onto the happy moments (and black out the tantrums๐Ÿ˜‚) and it really helps me to get through the tough times. I have started a new Friday night tradition in my house, seeing as we wonโ€™t be able to go to a restaurant for the foreseeable future. We put on our pajamas, light the fire, make homemade pizza and watch a movie together. Yesterday we made homemade courgette and sweet potato chips as well. All of the recipes are on previous posts. I added half a grated courgette and a red pepper to Louโ€™s pizza sauce to sneak a few extra veggies in. (I have enough pizza sauce in the freezer to get me through the current lockdown). We never eat in front of the tv so it was a real novelty. It is also perfect weather for snuggling ๐Ÿฅฐ๐Ÿ•๐Ÿฅฐ๐Ÿ•๐Ÿฅฐ๐Ÿ•

It is so nice to have a bit of down time off the clock with my boys this week. We made Christmas cookies last week and cupcakes today. Unfortunately there is not much time for this during term time. My boys just love purple carrot so any time I see them in the supermarket I snap them up. We had a small, socially distant birthday gathering on the beach today so I decided to make a batch of these cupcakes using purple carrots. I also squeezed the juice out of the carrots and added it to the icing so I got a naturally lilac icing- so pretty ๐Ÿฅฐ๐Ÿฅฐ. There were none left so itโ€™s safe to say everyone loved them. They are a much healthier alternative to regular queen cakes so there is no guilt! Ingredients
50g melted coconut oil
50g caster sugar
200g self raising flour
150g apples sauce (if you donโ€™t have apple sauce use 150g grated apple and an extra egg)
200g grated carrot
1 tsp cinnamon
50g raisins
ยฝ tsp salt
1 egg beaten
Icing
50g butter at room temp
200g cream cheese at room temp
50g icing sugar
Method
Combine all of the ingredients for the cupcakes together in a mixing bowl.
Spoon into a silicone cupcake mould
Bake at 180 degrees for 20-22 minutes (pierce with a skewer to see if they are ready - if it comes out clean they are done, if it doesnโ€™t return to the oven for another minute or two)
Allow to cool
Whip sugar, butter and cream cheese together and put into a piping bag.
Keep the piping bag in the fridge and ice them just before you eat them.

๐ŸŒŸ๐ŸŒŸGingerbread Men๐ŸŒŸ๐ŸŒŸ are so cute this time of year. ๐ŸŽ„๐ŸŽ„๐ŸŽ„

We made the real deal Gingerbread cookies last week. They were really good but full of sugar!! (Brown sugar and alot of molasses).

To reduce the sugar for little kids I came up with this recipe. It makes lovely delicately spiced shortbread style cookie. There is no fancy equipment needed.

A lovely treat for younger kids. And so good with a cup of tea. Santa would love these to be left by the tree.๐ŸŽ„๐Ÿง‘โ€๐ŸŽ„

Ps. If you buy treacle for the cookies you can also make a treacle glaze for your baked ham.๐Ÿ˜‰

Toddler Gingerbread Cookies

1 cup plain flour
ยฝ teaspoon cinnamon
ยผ teaspoon mixed spice
ยฝ teaspoon ground ginger
2 tablespoon honey
1 tablespoon treacle (or molasses)
1-2 tablespoon milk
60g butter room temperature

Measure everything into a mixing bowl.
Roll up your sleeves and with clean hands work the ingredients into a dough.
If it's too dry add a tiny bit more milk. If it's too wet add a tiny bit of flour.
Place the ball of dough between two big pieces of parchment paper and using a rolling pin roll until the dough us about 5mm thick.
Lift the parchment and dough onto a big baking tray and put in the fridge for at least half an hour.
Preheat the oven to 160C.
Prepare a baking tray with baking parchment.
Cut the cookies and place on the tray. Bake for 10- 15 mins.
Allow to cool and enjoy along with your toddler and a glass of milk.

This is one of my fav recipes when I'm struggling to get veg and eggs into my fussy toddler! He'll munch on these until he's full. ๐Ÿ˜๐Ÿ˜๐Ÿ˜They are so easy and yum with a tomato and avocado salad too!!!

The leftovers go into my daughters lunchbox..total win!

๐ŸŒŸ๐ŸŒŸSweetcorn Pancakes๐ŸŒŸ๐ŸŒŸ

200g tinned sweetcorn - drained
35g self raising flour
1 x egg
1 tbsp melted butter
Oil for frying

Put the sweetcorn into a bowl and blend to a puree, add the egg and give it another blend. ( you can use a food processor or hand blender)
Add the flour to the sweetcorn mix and fold in until you have a smooth batter.
Add the melted butter last and gently fold into the batter mix.

Warm a frying pan to a medium heat, coat the pan with oil and fry gently on both sides till cooked through, around 5 minutes.
