Lynda is the Director of Lynda Booth’s Dublin Cookery School (Blackrock) and is widely recognised as one of Ireland’s best cookery teachers. She set up the school in 2007 and since then it has gone from strength-to-strength, claiming the title of ‘Best Irish Cookery School’ at the 2013 & 2015 Irish Restaurant Awards. Five things in your kitchen that are more dangerous than you think.

Most of us learned to cook by watching someone else. Which means we also picked up the gaps — the habits nobody flagged, the shortcuts that became normal. The blunt knife you keep meaning to sharpen. The pan handle turned out over the hob. The handwash that didn't happen between the chicken and the phone. None of it is carelessness. It's just what wasn't taught.

This is a sneak peek inside The Beauty of Bread — a hands-on bread baking class at Dublin Cookery School in Blackrock, Co. Dublin. You'll learn how to make and shape dough, understand proving, and walk out with a proper loaf you've built yourself from scratch. No shortcuts. Just real technique taught by experienced tutors in a working kitchen. If you've been curious about bread but never known where to start — or you've tried and it hasn't gone to plan — this is the class. Dates are listed on our website.

This pasta shape is called caramelle — named after the Italian word for sweets.
You fill a square of fresh dough, roll it around the filling, then pinch and twist each end shut. The result looks exactly like a wrapped sweet. Every piece is made by hand, so no two are identical.

We're making them this coming Monday as part of our Pasta Masterclass: Explore More at Dublin Cookery School in Blackrock. The full menu for the night: Amatriciana with guanciale and hand-cut noodles, seasonal caramelle, a cannelloni demo, and roast fruit with honey mascarpone for dessert.
