This as we celebrate Pancake Tuesday, let's take a moment to appreciate the incredible journey of maple syrup from tree to table. Maple syrup is made from the sap of maple trees, primarily sugar maples, red maples, and black maples, which store starch in their trunks and roots during winter. This starch converts to sugar in the spring, creating the perfect sap for syrup production.

This I'm sharing one of ITEN's favorite trees: the Katsura Tree!

From spring's reddish-purple leaves to summer's green, and autumn's breathtaking yellow-orange display, this Japanese native is a true showstopper. When its leaves fall, they release a sweet fragrance of burnt sugar or candyfloss that's so delightful you'll want to collect every fallen leaf!

This given the tragic wildfires in LA, it's crucial to highlight the role trees play in wildfire prevention. Here’s how they help:

1.Natural Firebreaks: Trees create barriers that slow down fire spread.
2.Wind Blockers: They reduce wind intensity, lowering fire risks.
3.Humidity Boosters: Trees release moisture, increasing local humidity and making fires less likely.

By planting and caring for trees, we can enhance our landscapes' resilience against wildfires. To discover more benefits of trees, visit:https://www.ucc.ie/en/tree-explorers/
