難得手上有幾款空運而來,烘焙狀態極佳的美國第三波名店的 ESPRESSO 配方豆,每款咖啡豆我們都使用義大利式與美歐式二種方法製作 ESPRESSO ,並量測濃度,計算萃取率等....,當然,數據只是比對的參考,最終還是必須以感官品鑑為依歸,在相同的數據下,感官品鑑系統能告訴你更多訊息...,下一次我們將使用幾款來自於義大利不同烘焙區域的 INEI 認證咖啡豆,也許還會有台灣烘焙好手的咖啡豆也說不定,在整理出一個清晰的輪廓之後,我們將舉辦一場品鑑會,由 IIAC 的咖啡感官品鑑師們一起探討多樣性的 ESPRESSO 咖啡風味。
