4月25日, Concord Wines聯同Culture Shock 文薈館舉行了一場Wine Dinner. 與超過50位酒客一同窺探飲食配搭的藝術. 當晚有10款來自法國, 西班牙, 德國, 智利和澳洲的葡萄酒, 與由文薈館精心炮製的佳餚擦出道道火花. 當晚每一位客人都盡興而歸, 樂此不疲!

**Easter chocolate torte**
Serves: 12
Prep time: 20 minutes
Cook time: 25 minutes
Ingredients:
200g The Co-operative Fairtrade dark chocolate
100g unsalted butter
100g light soft brown sugar
2 tsp vanilla extract
150g ground almonds
4 medium free range eggs, separated
Cocoa powder and chocolate mini eggs, to decorate
Recipe method:
Preheat the oven to 160˚C/fan 150˚C/Gas 3.
Lightly grease and base line a 20cm spring form cake tin.
Break the chocolate into a bowl and melt over gently simmering water.
Leave to cool slightly. Meanwhile, in a large bowl beat together the butter, sugar and vanilla. Add the ground almonds and egg yolks and beat together.
Add the melted chocolate and keep stirring until mixed together.
In another bowl, whisk the egg whites until stiff and then carefully fold into the chocolate mixture until everything is mixed together.
Spoon into the tin and bake for about 25 minutes until the mixture is cooked and set – it will still be slightly gooey.
Leave to cool.
Lightly dust with cocoa powder and decorate the top with chocolate mini eggs.

**Happy Easter Chocolate Truffle**
About 20 pieces
•200 g dark chocolate 70 %
•50 g milk chocolate
•1 dl/0,4 cup heavy cream
•½ tablespoon finely ground espresso beans
•1 teaspoon honey
To dip and roll:
•150 g dark chocolate 64-70 %
•½ dl sifted cocoa
Chop the chocolate and put it in a stainless steel bowl. Boil the cream, coffee powder and honey. Pour the hot mix over the chocolate and stir to a smooth truffle. Cover the bowl in plastic and put it in the fridge overnight so the chocolate can harden. Take out the truffle and scoop out medium sized pieces with a spoon. If the truffle is too hard, put it briefly in the microwave. Roll the pieces into balls. Melt the chocolate and dip the truffles one after another in the chocolate and then in the cocoa to make a thin shell around the truffle, and then put them on baking paper. Keep the truffles in a tight jar in the fridge.

In Bordeaux you can drive past vineyards in villages that share the same climate but whose wines taste completely different; and when asked why, those who have worked the land for many years will shrug their shoulders and reply "the soil."
The French were the first to recognize the role soil plays in wine's development, and thought it is important enough to build an entire classification system around the concept of terroir. The key factors underlying the French Appellation d'Origine Contrôlée system.
Which is why those who collect and enjoy French wine do so through the names of vineyards and villages, as opposed to, say, grape varieties.
Chardonnay grows well in limestone and marl-rich soils, while Cabernet Sauvignon is particularly suited to sandy gravel.
It's no coincidence that many of the best Cabernet Sauvignons in Bordeaux are grown on the Left Bank in the Médoc, which is made up of sandy gravel.

Its Spring coming up! Lets make some desserts and enjoy them with our award winning dessert wine-Noble One!
Nutella Crunch Ice Cream Cake
Prep Time: 8 hours
Cook Time: 5 minutes
Total Time: 8 hours, 5 minutes
Yield: 12-14 servings
Ingredients
2 cups Nutella
6 cups Rice Krispies cereal
1 gallon vanilla ice cream
Instructions
1.Place a 9 or 10 inch springform pan, as well as a very large mixing bowl in the freezer to chill.
2.In a large saucepan over low heat, combine the Nutella and Rice Krispies cereal. Mix well until the Rice Krispies are completely coated with the Nutella. Remove from heat.
3.Line a sheet pan or cookie sheet with parchment or wax paper. Pour the Nutella-Rice Krispies mixture onto the lined sheet pan and spread evenly. Then place in the freezer to chill.
4.While the coated cereal mixture is cooling, remove the ice cream from the freezer and place in the refrigerator to soften.
5.After about 30-45 minutes (you want the Nutella coated cereal to be cooled and firm but not frozen at this point) – using a fork and knife – cut the coated cereal into bite sized pieces. Place back into the freezer, if necessary, until the ice cream is softened.
6.Once your ice cream is softened (it should be just softened enough to stir in the coated cereal but not so melted that it is runny), remove the Nutella-cereal pieces, the large mixing bowl and the springform pan from the freezer.
7.Reserve 2 cups of the Nutella-cereal mixture.
8.Quickly combine the ice cream and remaining coated cereal in the chilled mixing bowl, then pour the mixture into the chilled springform pan, packing it firmly so that there are no air pockets. Top the cake with the reserved Nutella-cereal mixture.
9.Cover with plastic wrap and place the springform pan back into the freezer for at least 4-6 hours or overnight until completely frozen.
10.Remove the cake from the freezer about 30-45 minutes before serving and place in the refrigerator to soften a bit.
11.When ready to serve, place the cake on a platter or cake stand and remove the sides of the springform pan. Cut and serve immediately.

After taking a look at the chart, there are a few things that you’ll notice about pairing wine and food.
Despite the common misconception that red wine and chocolate are best friends, this pairing is actually difficult to pull off.
The bitter flavors in the chocolate multiply with bitter tannins in the wine, which makes the entire pairing taste too bitter.
•White wines tend to pair better with lighter foods such as green veggies and fish
•Keep clear of red wine and fish for the most part unless it’s a rich not-so-fishy fish
•Sparkling wine pairs with a wide variety of foods because it acts as a palate cleanser
