Modern Gastronomy: From Tradition to Gourmet.
In modern times, although home preparation has declined due to fast-paced lifestyles, hachla has not lost its popularity. On the contrary, it has experienced a creative revival. Women’s agritourism cooperatives and local producers in Lesvos have preserved the authentic recipe, packaging the product and making it known throughout Greece and abroad.
At the same time, hachla crossed the threshold of traditional kitchens and dynamically entered the contemporary dining scene:
The Classic Version: Remains the warm, thick soup made with fresh tomato, olive oil, and grated Lesvos feta or ladotyri.
The Modern «Bougiourdi»: The most popular evolution is baked hachla. The «cup» is filled with cherry tomatoes, peppers, oregano, local ladotyri or graviera, and a few drops of extra virgin olive oil, then roasted over coals or in the oven until the cheeses melt. The crispy outer «bowl» is eaten together with the filling, offering a unique texture experience.
Gourmet Creations: Modern chefs use hachla as a base for seafood appetizers (such as shrimp or octopus), wild mushroom and local herb fillings, or even as crispy croutons in fresh salads.
In this way, hachla managed to transform from a humble food of necessity into an emblematic product of gastronomic tourism, encapsulating all the history, craftsmanship, and flavor of Lesvos in a single bite.
