A fantastic development day looking at more in depth butchery skills. We butchered a rabbit to take home and made delicious rainbow trout finger sandwiches. Other than a squeeze of lemon everything came from within a few miles of where we were today!

Fallow Buck heart (still warm), unwashed eggs and Cornish sea salt.

🥚 Eggs → choline, B12, selenium, iodine, protein

🦌 Deer heart → B12, iron, zinc, selenium, B vitamins, CoQ10, protein

🧂 Sea salt → sodium; essential minerals

All very good stuff but the big hitters are the B12 and haem iron which are far more readily absorbed from meat, particularly organ meat. The other essential nutrient is choline in egg yokes - vital in efficient brain and nervous system function.

It’s also super tasty and highly sustainable!

The evenings are drawing in and the Roe deer have the beginnings of their winter pelage (coat) just starting to show. These encounters more than anything else are what keeps me coming back to the woods, hills and moors.

A cracking afternoon at the Exford & Simonsbath Flower and Produce show. The deer drag obstacle course was popular, giving children a taste of what it takes to get food from the forest to the plate. A huge thanks to the organisers and everyone that came to chat and say hello.

How do we improve animal welfare in our food system? Put the animal back into the food conversation! No one will care about the life (or death) of an animal if it’s just seen a blob of plastic wrapped flesh. A brilliant morning with a great group of curious children and their parents. Such a good day yesterday at Exford Show! Thank you to everyone who came to speak to us and for all the support. A massive thanks to organisers who work so hard to put on such a great show.

As well as having a brilliant day, we also won the best trade stand for 2026!
