An easy light fruit cake packed with raisins or sultanas that have been soaked in Earl Grey tea ! Great to nibble on !
Soak 12ozs fruit in 10 fl ozs strong Earl grey tea ( I leave all day or overnight)
Cream together 8 ozs baking spread with same weight of caster sugar
Mix in 3 eggs
Stir in cold fruit mixture ( no need to drain )
Fold in 12 oz plain flour, with a half teaspoon of baking powder, add a tsp earl grey tea leaves

Level into an 8” cake tin

Cook at 160c ( fan 140) for about an hour and a half, sprinkle over a spoon of Demerara sugar about 45 mins after cook starts

Half the cake went to my neighbours 😂😂😂
