Bake 24 | Cake 04 | Strawberry Jam Doughnut
One tin. 20x20cm. A new recipe every week.
Confession time. I don’t like doughnuts. I never have and I don’t think I’ll ever be converted. Don’t get me wrong, I’d LOVE to love them, they always look delicious and smell incredible but it’s a big fat no from me. SO in a bid to get myself involved in the doughnut hype, I’ve tweaked a classic sponge for a birthday cake meets doughnut mashup. I think they’re great, but try them for yourself and let me know what you think!

Ingredients
Cake
- 250g unsalted butter (room temp)
- 250g granulated sugar
- 240g plain flour
- 10g baking powder
- 4 medium eggs
- 1 tsp vanilla extract
- pinch of sea salt
- 15ml milk
- 150g strawberry jam
Topping
- 50g unsalted butter
- 100g granulated sugar
- 5g cinnamon (optional) .uk
Equipment
- 20x20cm tin
- Greaseproof paper
- Mixing bowl
- Electric whisk
- Rubber spatula
- Sharp knife
- Chopping board
Method
1. Preheat oven to 160C (fan)
2. Grease & line your tin
3. Add butter & sugar to a bowl, mix with electric whisk until light & fluffy
4. Add eggs one at a time, whisking until combined after each
5. Add salt, vanilla, flour, baking powder & milk
6. Fold in using your rubber spatula
7. Spread mix into the greased & lined 20x20 tin
8. Generously swirl through the jam making sure you get right into the corners
9. Bake at 160C for 48 minutes
10. One cooked, turn out onto wire rack
- It should be golden & a skewer comes out clean
11. In a small bowl, mix the sugar & cinnamon topping
12. Melt the remaining butter, and drizzle over the cake
13. Sprinkle over the cinnamon sugar & allow to cool in the tin
14. Slice in 16 squares & ENJOY
