Training should not all just be intervals and threshold to push power up. For longer races and sportives you not only need power and fitness to follow attacks and tackle tough climbs but a big pool of energy to use repeatedly and efficiently. A long ride riding throughout all of the zones is all that can properly replicate the energy uses of such a demanding event. On a nice day it can also be fun and take you to feelings in training undiscovered.
