Gochujang Chicken and Rice

Ingredients
For the Chicken:
1½ lb (700 g) boneless, skinless chicken thighs, cut into bite-sized pieces
2 tbsp gochujang
1 tbsp soy sauce
1 tbsp honey
1 tbsp sesame oil
3 cloves garlic, minced
1 tsp grated fresh ginger
1 tbsp rice vinegar
½ tsp black pepper
For the Rice:
1½ cups jasmine or long-grain rice
2¼ cups water
½ tsp salt
For Serving:
1 tbsp sesame seeds
2 green onions, sliced
1 small cucumber, sliced
Optional: shredded carrots and extra gochujang
Instructions
Make the sauce: In a bowl, whisk together gochujang, soy sauce, honey, sesame oil, garlic, ginger, rice vinegar, and black pepper.
Marinate the chicken: Add the chicken pieces and toss until evenly coated. Let it marinate for 15–30 minutes.
Cook the rice: Rinse the rice until the water runs mostly clear. Add rice, water, and salt to a saucepan. Bring to a boil, cover, reduce heat to low, and cook for 15 minutes. Remove from heat and let it rest covered for 5 minutes.
Cook the chicken: Heat a large skillet over medium-high heat. Add the marinated chicken and cook for 5–7 minutes per side, stirring occasionally, until browned and cooked through.
Caramelize the sauce: Reduce the heat to medium and cook for another 2–3 minutes, stirring frequently, until the sauce becomes glossy and slightly sticky.
Assemble: Spoon steamed rice into bowls and top with the gochujang chicken.
Garnish: Sprinkle with sesame seeds and green onions. Serve with cucumber and carrots on the side.
