** Special offer ** my darling daughter Isabella is 7 months old! Where has that time gone? Sorry for the radio silence, but I wanted to enjoy this precious time with her without distractions. I am so loving being her mummy 😍

We've recently started baby led weaning, which is fun but messy, and she's definitely my daughter - her favourite foods so far are pureed black beans 🫘 and aubergine! It's so lovely seeing her enjoy her food 😁

Ian and I are delighted to announce the safe arrival of our precious daughter, Isabella Joella Jemison, born on 9th April weighing 7lb 7oz 💖

She's already stolen our hearts, we're all in love and couldn't be happier now our little family is complete 💕 plus she's a true foodie already, like her mum!! 🥰

New and final recipe incoming and this is a cracker! 💡 Chocolate, date and peanut butter bark 🍫🥜

I'm sharing with you the ultimate treat as a last gift before signing off for a while to have baby Jemison (I'll let you know when baby arrives, but otherwise I'm going to be spending precious connective time with baby rather than social media!)

So, I wanted to end on a high. I created this for my last month of pregnancy as they say dates can help with labour, but these are for anyone at any time and have gone down a storm with all my friends and family who have tried it.

You can make a big batch and freeze some too 👍😋 🍫

150g dark chocolate
Smooth peanut butter
Hulled h**p seeds or pumpkin seeds
10 medjool dates (destoned)
Mixed chopped nuts or whatever nuts you have chopped up

Boil the kettle. Break the chocolate into pieces into a glass bowl. Fill a small saucepan with the boiling water and place the bowl on top (make sure the bowl just sits on the saucepan and isn't bobbing around) let the chocolate melt.

Line a loaf tin or small tray with baking paper. Destone and chop the dates with scissors into 6 pieces each.

To assemble, place a small layer of melted chocolate on the baking paper and smooth out with a spoon to cover the base. Then add most of the chopped dates. Add a layer of peanut butter and smooth out over the dates, sprinkle with h**p seeds or pumpkin seeds.

Then add the remaining melted chocolate, smooth out with a spoon and sprinkle with the rest of the dates and the chopped nuts. Leave to set in the fridge for at least an hour.

Chop into small pieces and either freeze some for later or place in an airtight container in the fridge. Yummy 😋 enjoy!

Delicious mushroom stroganoff 🍄‍🟫🧄🍚 I've created a yummy, quick and easy dish with fibre and protein that happens to be vegan, for you to try 😋

Serves 2

400g box of chestnut mushrooms or use mixed mushrooms for extra flavour
1 medium white onion
2 small garlic cloves
Pinch of pink himalayan salt and pepper

Chop and sauté all of these in extra virgin olive oil in a large flaying pan until soft

For the sauce
1/2 block silken tofu (use the rest in a smoothie or make double the recipe and have leftovers the next day)
2 tsp wholegrain mustard
Pinch of salt
1 tsp mixed herbs
100ml water
100ml plant based milk

Blend all together until smooth in a blender, then heat through with your cooked mushroom mix. Add a teaspoon of cornflour if it needs thickening up. Serve with fresh parsley chopped on top and rice, quinoa or pasta

If you eat meat, you can also turn it into a pie filling by adding cooked shredded chicken and topping with some puff pastry and cook. It's so good 👍

Wellbeing Wednesday: digital detox. The average person checks their phone over 100 a day! How crazy is that? Think what we could be doing instead of all that time scrolling 🤯

I'm certainly going to be trying to use my phone less and be more present especially with baby arriving soon. It's not only good for our mental health but for our wellbeing too to have more screen free time 📱

Top Tip Tuesday: zero waste crispy sweet potato skins. If you're using the middle of sweet potatoes for mash, brownies or another recipe then don't throw the skins away! 🥔🍠

Place on a baking tray add a drizzle of extra virgin olive oil a good pinch of pink himalayan salt and paprika on both sides.

Cook on 180oc pr in airfryer for about 7 - 9 minutes until crispy, but keep an eye on them as they burn easily! 🤦🏻‍♀️ Full of fibre, great for gut health and taste yummy. Eat as they are or top with hummus and salad😋

Move over avocado on toast, there's a new kid in town! 🥑 my scrummy smashed peas on toast.

Full of fibre and protein which will keep your gut happy, I've topped with tomatoes, crumbled feta and sunflower seeds but you can pimp as you like, you could add egg etc. Simple, delicious and nutritious 😋

Per person

➡️100g frozen peas
➡️1/4 lemon zest and juice
➡️Small handful of fresh herbs such as chives, mint or parsley or a mixture
➡️1 small garlic
➡️Pink himalayan salt and pepper
➡️Spinkle of feta or vegan alternative
➡️Spinkle of sunflower seeds (toasted if you can)
➡️Couple of cherry tomatoes chopped up / feta for sprinkling on top
➡️Splash of extra virgin olive oil
➡️Sourdough, granary or gluten free bread

Boil the kettle.

Place the peas in a bowl and top with boiling water, leave to defrost.

Chop the tomatoes into pieces and peel the garlic. Chop the fresh herbs up too.

Toast your bread and drain the peas.

To a nutribullet or bowl to use a stick blender add the chopped herbs, garlic, peas, lemon zest and juice. Blitz together until chunky but all incorporated. Add a pinch of salt and pepper and stir.

Top your toast with the smashed peas, add crumbled feta, chopped tomatoes, sunflower seeds and finish with a splash of extra virgin olive oil. Delish👌😋

Fab Find Friday: vegan protein powders by Marvellous Superfood, who are a small independent company based in Wales. Their powders are 100% organic and natural ingredients, and there are no added nasties.

Welcome to Multi Award Winning Food For Thought Cookery School, based in the heart of Bournemouth, Dorset.

Not just a Cooking School, Food for Thought Cookery School is here to educate, inspire and encourage you on your health and wellbeing journey. I'm so passionate about teaching you quick, easy and healthy recipes that taste naughty but will actually nourish your body with ingredients that have energy boosting properties too. Gut health is my main focus which encompasses your overall wellbeing, not just the food you eat.

My own health has brought me on this journey, by overcoming anaemia through cutting out wheat, sugar and dairy for a period of time. Its amazing how the body can heal when it’s given the right tools. I have used my experience to create a brand where I can educate and inspire people through my knowledge, passion and enthusiasm and to show you it isn’t hard to create healthy, quick and tasty recipes from scratch.

My Cookery School takes a very balanced approach, I believe life is for living and enjoying, not depriving yourself, so although my classes and events are all gluten, dairy and refined sugar free, they are also fun, informative and most of all blooming tasty!!

My moto is it’s got to taste naughty but be nourishing for the body! I have created my own pure chocolate that tastes so decadent but is so good for you, it could even help you lose weight, give you energy and help build your immune system. You can learn how to make healthy chocolate in one of my classes, along with energising snacks, Mediterranean mezzes and healthy lunches to name a few.
