Hi, My name is Cathy, born and raised across the length and breadth of this vast country, India, and have my roots in Kerala, South India. My biggest influence, were my mother and my grandmother who created spectacular and flavorsome food that I grew up with. I got to cooking

It was a wonderful one to one session today .
We cooked, laughed, wined and dined enjoying the beautiful weather.
Our menu was from the South of India where the flavours are fresh, and the spices lend themselves to warmth and flavour that makes you fall in love with the food.

Spring is a time for enjoying longer days, new life in the nature that surrounds us and some refreshing flavours.
I made a quick and easy dessert using oranges and tangerines.

No part of the oranges are wasted. Even the rind is dehydrated and used as garnish.

We cooked Aloo Tikki Chaat, Kerala Coconut Chicken Curry, Achari Aloo Gobi, Tadka Dal and our dessert for the day was a refreshing,zingy Orange Kheer

An afternoon well spent with an amazing group of guests today learning, laughing and having some healthy competition.
Their excitement and enthusiasm on seeing the Appams ( Hoppers) being made was definitely one of the highlights.

When it was raining and cold outside we were warming ourselves with some hot and crispy Onion and Curly Kale Bhajis, Pork Vindaloo, Kadai Paneer and a lip smacking potato dish called Jeera Aloo.

Visiting the Golden Temple in Amritsar wasn’t just a tick in the box for me, it was a memorable and meaningful experience.

As a kid I always dreamt about eating the Prasad and Langar.
As a teacher I taught my students in RE about Sikhism and the Golden Temple being a sacred place of worship.
Now being a Chef just the thought of cooking and feeding 150,000 people every day of the year puzzled me.

The unconditional equality and selfless service of the volunteers is truly remarkable and touching. From the hymns being sung, in serving and being served, the fervent prayers being observed and the calmness that you feel there is a profound sense of spiritual serenity.
The feeling of equality is very special.
Have you ever visited a place that made you feel like that?
