Nothing beats hosting a wedding at St John’s College! Delicious canapés, a standout three-course dinner, and a fantastic after-party to top it all off. Massive credit to our top-tier kitchen brigade and incredible Front of House team for looking after the guests so brilliantly and running a flawless service from start to finish. 🍽️✨

It’s always a privilege to step out of the daily kitchen routine and run a live culinary masterclass for our incredible team at St John’s College, Oxford.

​This marks my 3rd upcoming masterclass with the team, and these sessions are fast becoming some of my favourite moments at work.

Coming from a teaching background alongside my time in the culinary industry, being able to share my skills while giving back to our workplace community is deeply rewarding.
​For me, initiatives like this go far beyond just learning how to bake a great sausage roll or shortbread. They are about:

​Staff Wellbeing: Creating a positive, welcoming space to step away from daily pressures, try something new, and enjoy the process.

​Building Connection: Bringing together team members from across the college who might not normally cross paths in day-to-day operations.

​Mentorship & Giving Back: Devoting time to help others develop new skills—because using what you know to uplift those around you is what it’s all about.

I’m proud to share that I have officially joined The Burnt Chef Project as an Ambassador! 👨‍🍳🔥

​Having spent over 20 years in professional kitchens, I’ve seen firsthand how intense, fast-paced, and demanding this industry can be. For too long, high pressure was accepted as the norm. But the narrative is changing, and it’s up to us as leaders to drive that shift.

​The Burnt Chef Project is doing vital work across the globe to eradicate mental health stigma in hospitality, providing essential tools, education, and confidential support networks for teams everywhere.

​I’m immensely proud to take on this role while representing St John's College, Oxford. The support and backing I’ve received from the college in championing team wellbeing and progressive kitchen culture has been second to none. Being able to step up as an Ambassador with the full support of St John's means a great deal to me—it shows what can be achieved when an institution truly invests in its people and leads by example.

​Heading up kitchen operations here proves every single day that you don't have to sacrifice high culinary standards to build a healthy, supportive, and sustainable work environment.

​Good food starts with good culture. When we look after our people first, excellence naturally follows.

Over the last few years, I’ve committed to pushing my physical and mental limits—both to support amazing charitable causes and to keep my own drive and motivation razor-sharp. 💪

​It’s been an intense, heavy-hitting, and incredibly rewarding few months. Recently, I’ve tackled:

​Crib Goch, Snowdonia – A brilliant, challenging technical climb across one of the UK's most famous ridges.

​Battersea London Mini-HYROX – A fantastic, fast-paced event.

​Aylesbury HYROX – Pushing through the pace and grit of a full simulation.

​GYMRACE Heavyweight – Stepping into the ultimate power category to push serious strength and conditioning numbers.

​Stepping up to these varied challenges has driven me to a major personal milestone: I am currently in the best physical and mental condition of my adult life.

​The hard work doesn't stop here, though. I have a packed calendar of events coming up, all building towards the big one: HYROX Birmingham.

​Staying disciplined in fitness translates directly into staying sharp, focused, and resilient in my professional life. Giving back to charity while bettering myself is a win-win.

The Fire Never Fades: Why the Long Shifts Still Matter 🔥

​Every now and then, a 12 to 15-hour shift comes along that takes you straight back to the roots of your career.

​For anyone in the kitchen, those marathon days are a rite of passage. Cranking through a packed breakfast service, flying through lunches, managing orders, writing menus, and ultimately delivering a flawless 3-course formal dinner—it is relentless, high-pressure work.

​But today, running those exact same hours didn't feel like a grind. It brought back a wave of great memories. It reminded me exactly why we step into this industry in the first place: pure passion for the craft.

​Hospitality has evolved, and finding balance is incredibly important. But there is still something undeniably rewarding about pushing your limits, working hard alongside a dedicated team, and executing a service to the highest standard from dawn till dusk.

​To the next generation of chefs coming through: the hours are tough, but the feeling of delivering a spectacular guest experience from the first plate to the last? There is nothing else quite like it.

​I still love every single second of it. 👩‍🍳👨‍🍳

🍽️ From the Main Kitchen Tonight at St John’s College

​There is nothing quite like the buzz of delivering a seamless dinner service, and tonight’s menu was an absolute joy to put out. We kept things elegant, classic, and focused on beautiful ingredients:

​To Start: Creamy Burrata paired with a vibrant heritage tomato salad.

​The Main: Perfectly roasted duck breast served alongside braised chicory, rich dauphinois potatoes, and star anise-glazed carrots.

​To Finish: A classic, decadent chocolate mousse pot topped with fresh raspberries and local edible flowers.

​An incredible menu is only half the story, though. A massive thank you to our front-of-house team for delivering amazing service, as always.

​Moments like tonight remind me exactly why I love what I do. Managing a kitchen operation of this scale is a massive team effort, and I’m incredibly proud of what we pull off night after night.

​On to the next service! 🚀

🍽️ Collaboration at Its Finest: The Audit Dinner

​It was a fantastic evening at St John's College hosting the annual Audit Dinner. For this event, we kept the menu focused, elegant, and precise with a simple yet beautifully executed 4-course dinner.

​An exceptional menu only truly shines when matched by the service, and it was an absolute pleasure to collaborate with the SCR Front of House team. I have always deeply appreciated the professional approach, meticulous attention to detail, and seamless ex*****on they bring to the dining room.

​When the kitchen and front-of-house teams work in perfect synergy, it elevates the entire collegiate dining experience. Exceptional food, flawless service, and a brilliant team effort all around.
​Thank you to everyone involved for making it a memorable and lovely service!
