EASTER – PAIRING WINE & CHOCOLATE
Pairing wine and chocolate can be a contentious point for wine lovers. The rich, bold tastes of both can make marrying them difficult. In order to make sure you get the maximum enjoyment from the consumption of both. Here are a few ideas to help simplify the complicated business of this pairing.

MILK CHOCOLATE – Pair with Port, Sherry, Banyuls, Pinot Noir
WHITE CHOCOLATE – Pair with Champagne, Riesling, Muscat, Fruity Chardonnay
DARK CHOCOLATE – Pair with Merlot, Cabernet Sauvignon, Barolo, Chianti
CARAMEL FILLED CHOCOLATE – Pair with Madeira, Meursault, Pinot Noir
DARK CHOCOLATE MINT – Pair with Port, Zinfandel, Cabernet Sauvignon
DARK ORANGE CHOCOLATE – Pair with Red Bordeaux, Vendange Tardive, Madeira

Basic wine and chocolate pairing rules include:
1.The wine should be as sweet as the chocolate.
2.Begin pairing by colour. The darker the chocolate, the darker the wine.
3. When possible, opt for a high-quality chocolate bar.
4. Consider texture as well as taste.

STORING YOUR WINE - SO LET'S TALK ABOUT WINE CELLARS...
The word 'cellar' doesn't mean that you have to live in a mansion where the magnificent vaulted cellar has storage space for case upon case of the most expensive wines. A wine cellar can be a box in the garage, a cupboard under the stairs or a suit case under the bed as long as it provides the correct (or something like correct) storage conditions.

And the reason you have one isn't to lay down bottles of wine ready for your grandchildren. It's there simply to provide you with what you want to drink when you want to drink it.

RECENT TRIP TO MADEIRIA
Madeira is a fortified wine, aged under heat, and produced in the demarcated region of Madeira from approximately 5 distinct grapes. It’s sold as either Dry, Medium Dry, Medium Sweet or Sweet, all of which are marked by their high levels of acidity.

There are four “noble” grapes including: Sercial, Verdelho, Boal (also known as Bual) and Malvasia (aka Malmsey) each of which will produce a different style of wine

Brussels Sprouts – Pinot Noir or Chardonnay

MULLED WINE EASY RECIPE

Ingredients
Serves: 4
• 1 litre dry red wine
• 2 (5cm) cinnamon sticks
• 1 dessertspoon whole cloves
• 1 dessertspoon whole allspice
• 1 large piece orange rind (avoid the pith)
• 1 large piece lemon rind (avoid the pith)
• 4 tablespoons sugar, or to taste

Method
Prep:3min › Cook:20min › Ready in:23min

1.In a heavy saucepan over medium heat, combine the red wine, cinnamon, cloves, allspice, lemon rind and orange rind. Heat gently, but don't bring to the boil. Stir in 2 tablespoons of the sugar, and once dissolved, taste to see if you'd like to add more.

2.Keep hot on medium to low heat for 20 minutes to let the flavours infuse the wine. Serve your mulled wine hot in glasses or mugs.

Established in 2003 out of a love of ‘all things wine related’ AuFait with Wine is a Cheshire based wine appreciation and wine education session and tasting provider. Alongside this the business is also an approved provider (APP) which delivers the Wines & Spirits Education Trust (WSET) internationally recognised wine & spirits qualifications. The WSET is the foremost international body in the field of Wines & Spirits education.

Coupled with this a range of other management and hospitality related RQF qualifications from other recognised awarding bodies allow our trainers to use their industry experience, and relaxed yet professional style to work within both corporate and private settings.

Courses and training programmes are open to everyone and anyone (although those attending must be 18 years or over to take part in wine tasting). Workshops are only delivered by qualified teachers and can be either on our own site in Northwich, Cheshire, a customer’s premises or at your home using a range of inactive multi-media formats; uniquely AuFait with Wine has also developed a blended learning format for a range of its qualifications to suit those who cannot commit to attending classroom based sessions.
