There’s something so lovely about receiving photos like this and seeing people take what they’ve learned in the kitchen back home and actually do it.

Look at this fantastic loaf, a first attempt at home from one of our recent Chapel Kitchen students!

From learning how to make and shape the dough, understanding what your starter is doing, and getting to grips with the timings… to producing a beautiful loaf in your own kitchen. It’s so rewarding to see the enthusiasm that our classes inspire and to know that the sourdough journey continues long after everyone leaves the Chapel.

One of the questions I’m asked most often is: “What’s the best way to store sourdough bread?”

Over the years I’ve tried pretty much everything; bread bins, linen and cotton bags, beeswax bags, plastic wrap, greaseproof paper… you name it!

But the method I keep coming back to is surprisingly simple, the cast iron pot I baked it in.

I always take my loaf out of the pot as soon as it comes out of the oven. This allows the steam to escape and prevents the crust from becoming soggy.

Then, once both the bread AND the pot are completely cool, I simply pop the loaf back into its pot and put the lid on.

It’s the perfect storage container because it’s literally made to measure! It helps keep the loaf fresh, protects the crust and stops the bread from drying out.

And one more important tip…Don’t ever put your sourdough in the fridge!

Although sourdough freezes brilliantly, the cold temperature of the fridge actually encourages the starches in bread to recrystallise, which speeds up the staling process. At freezing or room temperature, this happens much more slowly, so your lovely loaf will stay fresher for longer.

So before you buy another fancy bread bag try putting your sourdough back in the pot it was baked in!

Two of the fabulous bakers from yesterday’s sourdough course , and what a brilliant job they did!

With no previous baking experience, they arrived ready to give sourdough a go and left with some seriously impressive loaves, plenty of new skills and, most importantly, a fantastic day in the Chapel.

This is exactly what our small, relaxed baking classes are all about, learning something new, having fun and enjoying plenty of good food along the way!

Sunshine, sea air… and, of course, sourdough!

We hope you’re all enjoying this spell of beautiful weather. Chapel Kitchen is taking a short summer break until the end of the month, and this week we’re exploring the stunning Suffolk coastline in search of some wonderful independent bakeries and artisan sourdough. There’s nothing better than discovering new ideas and flavours to bring home!

Our next available baking classes are on Friday 8 August and Friday 15 August, and we’d love you to join us. Whether you’re completely new to sourdough or looking to improve your baking, you’ll enjoy a relaxed, hands-on day, delicious homemade refreshments, and taking home your own freshly baked loaves.

Yesterday afternoon was all about Rascals and Shortbread, and what a lovely way to spend a few hours!

Our Yorkshire Rascal & Lavender Shortbread class was filled with the scent of delicious spices, lavender, lots of laughter, and some absolutely beautiful bakes. It was such a relaxed afternoon, with everyone enjoying the process as much as the delicious baked goods they took home.

If you’ve been thinking about trying something a little different, there’s just one Yorkshire Rascal & Lavender Shortbread class left in the calendar this year: Saturday 31st October

There aren’t many tools that are needed when you make sourdough, but the lame is definitely one of them.

If you’ve spent any time looking at sourdough baking online, you’ve probably noticed there are lots of different types of lames available. The truth is, there’s no single “best” option and it really depends on the type of loaf you’re making, the style of scoring you want to achieve, and what feels most comfortable in your hand.

That’s one of the many things we cover during our sourdough classes at Chapel Kitchen. As well as teaching the techniques behind great sourdough, we also talk about the tools of the trade, what they’re used for, and when to use them. Understanding the why behind the process can make all the difference when you start baking at home.
