Easy chicken satay. To serve 4 people as a starter you will need two large chicken breasts , mild curry powder 2 tablespoons , dark soy sauce 2 tablespoons 1 inch grated ginger or a teaspoon of dried ginger a can of coconut milk, chili powder or fresh chopped red chili ( use to what spice level you like or leave out if you dont like it) vegetable oil one tablespoon. Salt adjust to taste. Cornflour 1 tablespoon. Two tablespoons of sugar. Four table spoons of crunchy peanut butter. For the chicken cut the breaststroke into long thin strips. In a bowl use one tablespoons soy sauce the vegetable oil one tablespoon mild curry powder and chili I'd say half a teaspoon which is what I use. And a tablespoon of sugar. Mix well and leave for an hour before putting on skewers. For the sauce in a saucepan put the peanut butter coconut milk and the remaining ingredients apart from the cornflour and bring to the boil stirring continuously. Reduce to a simmer and add the cornflour, stir until thick and take of the heat. Grill or bbq your skewers until cook. As a guide its five minutes each side. I serve mine with dried onion and pickled salad cucumber tomato and onion with red wine vinegar sugar and green chili. Enjoy 😉
