First pop-up done. And we learned A LOT. š„
This weekend we took Daddy Bear Grills to The Robertsbridge Club for their Oktoberfest event.
Live bands, plenty of b**r and us doing what we do best⦠cooking over fire.
But this one was different for us.
Weāre used to live demonstrations, masterclasses, private events and experiences. This was our first proper test of the Daddy Bear Grills pop-up concept.
We deliberately kept the menu tight:

The food worked.
The biggest lesson?
Systems, systems, systems.
You can have brilliant food, but when ten orders suddenly land at once, the system behind it becomes just as important as whatās happening over the fire.
Taking the order.
Getting the ticket to the right place.
Cooking multiple dishes at different speeds.
Building the order.
Serving it hot.
Clearing the ticket.
Then doing it all again⦠quickly.
We found the bottlenecks. We found things that worked really well. And we found things weāll change before the next one.
Thatās exactly why we wanted to test it.
Because the bigger plan is to start rolling out regular Daddy Bear Grills pop-ups across Kent and the surrounding areas.
Iām particularly interested in industrial estates, business parks and large workplaces where we could arrive on the same day each week and serve a proper fire-cooked breakfast and lunch.
Fresh ingredients. Proper meat. Cooked over real fire.
Weāre also heading into fireworks season with several events coming up, followed by a large Christmas market, so thereāll be plenty more opportunities to refine the operation.
