Easter pavlova recipe

You need
8 eggs white
500g caster sugar
1tsp cornflour optional
1tsp white vinegar optional

To dress
Fresh cream
Fresh fruit chopped

How to
Whip up the egg white until they are stiff peaks
Gradually add the caster sugar whilst mixing until the it looks glossy
Add the cornflour and vinegar and mix for 30 secs
With a pencil mark out an A4 size rectangle onto greaseproof paper dap a little of the pavlova mix on the corners, this will help it to stick to the baking tray
Spoon the mix onto the greaseproof paper keeping the pavlova mix approx 4inch high
Bake in a preheated oven at 110 oc for 1hr 20 mins
Turn off the oven and leave to cool for a few hrs
Cover with fresh cream and fruit of your choice

Tip... if you turn the pavlova over onto a tray before creaming and remove the greaseproof paper this gives you a smoother top and it is easier to cut
