Gluten-Free and Dairy free Carrot Cake

Ingredients

Cake
• 175g vegan butter
• 240g demerara sugar
• 5g mixed spices
• 40g almond milk
• 4g vanilla paste
• 190g whole eggs
• 64g ground almonds
• 175g gluten-free plain flour mix
• 8g baking soda
• 8g gluten-free baking powder
• 240g carrots (grated)
• 128g walnuts (chopped)



Method
1. Using a paddle attachment, cream together the butter, sugar and mixed spices until smooth.
2. Add the almond milk and vanilla paste.
3. Beat in the eggs gradually until fully incorporated.
4. In a separate bowl, combine the remaining dry ingredients and sift into the mixture. Mix until just combined.
5. Fold in the grated carrots and chopped walnuts.
6. Pour into a greased tin.
7. Bake at 180°C for 30–35 minutes.



Frosting

Ingredients
• 125g vegetable butter
• 125g icing sugar
• 250g vegan cream cheese
• 4g vanilla paste

Method
1. Soften the butter.
2. Add the icing sugar and mix.
3. Add the cream cheese and vanilla, and whisk until smooth.
• If the mixture is too firm, add a small amount of almond milk.

What a weekend at the Free From Festival Bristol 2026 ✨

The vibe was incredible — you can really feel how this community keeps growing every year. I had the chance to discover exciting new brands, reconnect with familiar faces, and see how much innovation is happening in the space.

I even got to be part of the judging panel and selected Gluten Freedom as the best food stand 👏
(And yes… tacos for lunch were absolutely the right decision 🌮)

This festival is clearly getting bigger, better, and more relevant with every edition — and I’m already looking forward to the next one.
