This recipe is inspired by Indian cooking queen Madhur Jaffrey. I still have her Indian Cookery book from the 1980s! Indian food is mostly naturally gluten free (apart from some of the breads). You can leave out the chilli and the cayenne pepper if you don't like your food to be too spicy. I added the lentils for protein but you can leave those out and serve it as a side dish....

Stir fry with fresh garlic, chilli, ginger and lots of vegetables!
Chop everything into small pieces
Heat oil over high heat
Soak rice noodles in boiling water
Flash fry garlic, chilli and ginger
Add the veg apart from the kale and stir fry for a few minutes
Add protein of your choice
Drain noodles and stir into vegetables
Add kale and drained bamboo shoots if wished and stir for another minute or so.
Mix a teaspoon of cornflour with a little water and stir into vegetables to thicken
Splash in loads of tamari soy sauce and drizzle over some toasted sesame oil
Garnish with fresh coriander and chopped spring onions
Enjoy!

Home made porridge bread with tahini. Quick, easy and healthy with only 5 ingredients. Next time I'll add a teaspoon of mixed herbs too. ๐
1 tub Alpro unsweetened soy yogurt
2 tubs gluten free oats
1.5 tsp bicarbonate of soda
1/2 tsp salt
2 tbsp mixed seeds
Mix together and bake in preheated oven for 40 minutes at 180ยฐ

I'm going to have a go at making these wraps from Freefrommadeeasy. It's a lot cheaper than buying them!
