Priority 1
Ensure AOP members' views and concerns are represented in the upcoming Education strategic review consultations.
Priority 2
Working closely with the AOP to enhance clinical skills across the board. Developing relevant CET courses to ensure Optometrists are well equipped for the changing scope of this profession.
Priority 3
Working closely with AOP members' to bring forth there concerns i.e. safer testing times going forward.

Teriyaki tofu subs

One of my favourites recipes to try as a former subway lover this is perfect veggie baguette 🥖
This is the perfect dish when you want something more-ish.

Ingredients 🌱
- 1 block of extra firm tofu
- Tofu press I use tofuture (bought from Amazon)
- Olive oil
- Baguettes
- Salad of your choice.

*️⃣For the marinade the tofu.
- 3 tbsp of light soy sauce
- 3 tbsp of dark soy sauce
- 3 tbsp of teriyaki sauce
- BBQ seasoning to taste
- Sriracha to taste.

Method
1️⃣ Drain the tofu overnight, I use the tofuture tofu press. (Bought from Amazon)

2️⃣ Once drained cut the tofu into rectangular slabs. (As shown above).

3️⃣ Place the sliced tofu and marinade into a shallow dish. Let the tofu marinate for at least 1-2 hrs. ( the longer you marinate the tofu the more flavour tofu will soak up. I usually do overnight unless in a hurry).

4️⃣ Add the marinated tofu to a
pre- heated skillet cook until golden brown on both sides.

5️⃣ Add the remaining marinade slowly gently stirring the tofu slabs will take it up.

6️⃣ Serve in a baguette 🥖 with salad 🥗.
