“Pudding” was probably borrowed from French ‘boudin’ in the 12th century. The meaning in English developed from entrails and boiled sausage (see black pudding) to ‘pudding’ defined as a boiled, steamed or baked dish involving flour/starch, milk and eggs, usually sweet but also savoury (see Christmas pudding, sticky toffee pudding, Yorkshire pudding, haggis etc.). In Britain, the word on its own is used now as a synonym for a sweet after a meal, a dessert. A final interesting point: from the 17th century onwards, the English ‘pudding’ was borrowed into many European languages.
