The art of sprouting from the Plant Academy Kitchen 🌱

Sprouting literally means to bring a seed to life, and like fermentation, it makes plants more easily digestible, their nutrition more bioavailable, and there’s something quietly joyful about watching something come to life a little more each day 🌱🫘

Sprouts are packed with enzymes, vitamins and minerals, and because the sprouting process breaks down anti-nutrients, your body can absorb all of that goodness far more easily. In the kitchen, they bring texture and freshness to everything from salads and grain bowls to soups, wraps and ferments.

You can sprout many kinds of seeds, beans and legumes, and there are three ways to do it. Each one is simple, requires very little equipment and can be done right in your own kitchen.

Kombucha- Litas, the perfect summer drink, straight from Plant Academy: The Cookbook 🌱

Grapefruit, lime, rosemary and a spiced smoked salt rim, there’s a reason this one keeps coming back to our table. 🍹

This Kombucha-lita is our take on the Mezcalitas of Mexico, and celebrates the versatility and flavour fermentation brings. Kombucha is one of our favourite ferments to cook and drink with. It’s naturally effervescent, gut-supporting and endlessly adaptable.

🌞 Rosemary syrup: sprig of rosemary, grapefruit zest and agave syrup
🌞 Fresh grapefruit and lime juice
🌞 Kombucha
🌞 Spiced smoked salt rim: smoked salt, dried chilli flakes and ground cinnamon

You can change the citrus or swap the herbs to any combination you desire and have a completely different drink every time.

The art of plating from the Plant Academy Kitchen 🌿🍽️

Plating is the final step of any dish and often one of the most overlooked.

It doesn’t need to be complicated, but putting a little more intention into how you present your food will always make a difference! From choosing the right plate for the mood of a dish, to working with colour, negative space and height - these are the principles we come back to again and again in the Plant Academy kitchen.

The ingredients should look like they have gracefully fallen onto the plate, and as Coco Chanel would say,  “always take off the last thing you put on” to create beautiful, delicious plant-based dishes.
