This week, we're revisiting 2019's 'London 2026: Recipes for Building a Food Capital' which focused on how urban societies can become more self-sufficient, by growing their own food across a variety of scales, from entire buildings to domestic hydroponics.

First up is one of the many London projects featured in the exhibition, Mission Kitchen.

With a surge in interest in food issues, London has seen a boom in entrepreneurial food culture. By the time the exhibition launched, more food businesses were applying for start-up loans than any other sector, with over 15,000 emerging into the UK market each year. Mission Kitchen was set up in 2016, to overcome some of the difficulties early stage food businesses face in getting their hands on kitchen space, equipment, certifications and the support they need.

The new Mission Kitchen flagship site, designed by 00 Architecture and currently under construction, will be located in the historic redevelopment of London's New Covent Garden Market and will be a central feature of its transformation. Mission Kitchen will dedicate more than 1672 m2 of floor space to the support of new start-up food businesses, comprising top-of-the-range commercial shared kitchens, studio spaces and a sustainable food incubator. It will become a cooking community, where members can cook together, work together, eat together and learn from one another, and will include an events programme with exhibitions, training classes, talks and tastings, that celebrate food culture and teach new skills.

We asked Simon and Phil, What keeps them inspired, especially during the rough 2 years we just had with the pandemic.

"I think one of the mains things for us in the farmers market and people trying their first oyster and being amazed. Being able to explain the story and tell them how to eat it, how its been grown, explain what they’re looking for whilst their eating it, the subtle flavours. That’s what inspires me everytime! It’s accessible to everyone. We’re also inspired by the oyster farmers who we represent, we tell their story, the amount of work they do and we are so previgilaged to be working with them so direcrly. Totally buzzed off their passion. When we sell a oyster to a restaurant or someone at a farmers market, we see people’s face light up when they taste that first hit of brine and that rush of the ocean, that really tickles us still.”

Follow the boys to keep up to date with all things oysters.

We caught up with James and Phoebe and asked them how the brand was born and what their mission is.

James said “I used to cook at big lodges in France and one day I got called out to work 5 weeks in a chateau. I needed a front of house so I asked Phoebe to come out, when she did she couldn't get away from her art and kept doing her paper studies. They ended up revolving around the food I was cooking and the market trips in like a little abstract way. At the end of it she had around 30 paper studies and we thought it would be cool to exhibit them with the food I cooked. We kind of sat on the idea for a really long time. We didn't really know how to do it and ended up starting small at a little pop up in Nottingham for 12 people.”

Our mission at Palette is to merge the food and art world in an accessible way to more people. In a way that we can both enjoy them.

Photos from Mission Kitchen's post 07/03/2022

This time with
Meet shared kitchen members James and Phoebe, they make up A unique dining experience exploring the sensory connections between food and art.

Phoebe is an abstract artist mainly painting about food, she used the process of painting to explore the connections between the two creative fields of food and art while her partner and co founder James is a professionally trained chef of over 10 years, previously working mainly in London restaurants as well as a few ski seasons in France they realised they wanted to put all their energy into something they can call their own.

James says: “Phoebe’s first 24 paper study series consciously based around food was done whilst we were both working in rural France doing private catering. Market visits daily, fresh produce, beautiful smells and tastes was amazing inspiration for cooking whilst also permeating Phoebe’s practice and shaping the nature of her work. And so, Palette took seed in our minds!

Salty, earthy, and, yes, funky, miso has the sort of deeply layered flavour that can only be the result of nature and time. It’s the key to umami-rich broth without the meat, to creamy salad dressing with the optimal balance of salt, and to glaze that leaves fish crispy and caramelised.

This month on The Bookshelf we’re excited to present the mouth watering, super duper slick cookbook by our very own member Bonnie Chung. The Cookbook explores the great versatility of this trendy paste, and demonstrates the depth that it can bring to everyday cooking. Bonnie’s book shares 60 recipes on how to enjoy Miso in both Japanese and non-Japanese dishes.

One of our fave recipe from the book has to be the Grilled Tofu with Leek & Miso Sauce. Sweet, salty, smokey, meaty and so quick to make. These flavours hit different and it’s perfect for a midweek dinner!

We're kicking off the new year with a catch up with member Cecile Bere, Founder of a curated Afro deli shop based in London.

"I've been living in London for more than 10 years now, I came just after university for an internship as I wanted a place not too far away from Paris, but also with the excitement of a big city. London was the perfect combo at this time and still is.

The Epicerie was born from the idea to develop a quality range of African inspired products as I noticed that the market was not offering a lot of choice, so I decided to create something different with in mind the quality, the taste and originality.

I grew up between Côte d’Ivoire and France – these are both cultures that value food highly, where food is a way of life.

Food in my family, in the cultures I grew up in, has always been important as a vector of transmission of values, to create communities, an excuse to open conversations, to share".
