Molise: the last undiscovered corner of Italy 🇮🇹

Boil the potatoes, then toss them in the dressing while they’re still warm so they drink up the lemon and balsamic (that’s the secret). Pile in crisp green beans, edamame, radish and peppery rocket, and finish with pomegranate for a little jewel of sweetness. The way we eat at home in Termoli: simple, seasonal, generous.
Best made for a long lunch in the garden with the people you love. 🌿

BBQ Bream Recipe - Ask your fishmonger to clean two sea bream. Stuff each fish with lemon slices, parsley, and a lightly crushed garlic clove. Brush with olive oil, then BBQ with the lid closed for 8 minutes, turning halfway through.

I’m from Molise, a beautiful region in southern Italy between the mountains and the Adriatic Sea. A place where life still moves slowly, traditions are deeply rooted, and food is made with love and simplicity ♥️
When I return home, I’m reminded of what makes Italy so special to me:

Ciao! I’m Adele
Founder of MammaLina 🇮🇹✨
I was born and raised in Termoli, a beautiful fishing town on Italy’s Adriatic coast — an undiscovered region in Italy that few people know about 🌊
Some of my earliest memories are of standing beside my Mamma and Nonna in the kitchen, fresh pasta dough on the table, sauces slowly simmering, and long family lunches filled with conversation and laughter.
It was there that I learned food is never just food.
It’s tradition, connection, generosity, and love.
My Nonna always believed that feeding people was one of life’s greatest acts of care ❤️
Before creating MammaLina, I spent years working in investment banking across Europe… a very different world from the one I grew up in 😅
But over time, I found myself returning to what always felt most natural, cooking, hosting, and bringing people together around the table.
I’ve called London home since 2002, yet I still cook exactly the way I was taught in Italy 🇮🇹
Today, MammaLina is my Italian Cookery School in East London, where I share the family recipes, traditions, and techniques passed down through generations ✨
I’m also a proud mum of three beautiful girls, so my kitchen is still wonderfully loud, busy, and full of life 💛
Nothing makes me happier than seeing a table filled with homemade food, good wine, and people creating memories together.

In my Italian home region, today it’s all about fresh air, laughter, countryside picnics and the irresistible smell of arrosticini on the grill ❤️🔥
A true Abruzzo (and the neighbor Molise) tradition—simple skewers of lamb, lightly seasoned, shared with family and friends over long, joyful “scampagnate” (traditional countryside picnics spent eating, grilling and celebrating together).
Because that’s “la dolce vita”… and yes, truly addictive…uno tira l’altro 😉

Throwing it back to this pretty Easter Pavlova we baked a couple of years ago with my girls - berries, mini eggs, and all the love!

Buona Pasqua! 🇮🇹🐣
Ingredients (serve 8-10 people)
180g egg white (6 medium eggs white)
280g sugar
15g cornflour
1.5 tsp white wine vinegar
1 tsp vanilla extract
1g salt
2g cream of tartar
Method:
Preheat oven to 120°C and line a baking sheet with parchment, drawing a 20 cm circle.
Whisk egg whites until soft peaks form, then gradually add sugar, salt, cornflour, vinegar, vanilla, and cream of tartar, whisking until glossy and smooth (8–10 mins).
Spoon mixture into the circle, saving a little to add pink food color and create marble veins with a toothpick. Build edges slightly, leaving a gentle cavity in the center.
Bake 1 hr 15 mins, then let cool in the oven 4–5 hrs.
Fill with whipped cream and top with fresh strawberries, mini eggs, and edible flowers.

What an incredible supper club this week ✨
Hosted with the wonderful Carmela Sereno from .pastaroom at MammaLina Cookery School, we explored a 4-course menu celebrating all things risotto. From hands-on arancini making to a delicious Italian feast featuring risotto al radicchio e gorgonzola and torta di riso, it was truly a night to remember.
Beautiful food, lovely people, and such a warm, welcoming atmosphere — moments like this are exactly why I love what I do ❤️
