Nourish Bowl with Tofu, Quinoa & Roasted Veggies

Ingredients
• 1 cup quinoa, cooked
• 200g firm tofu, cubed
• 1 tbsp olive oil
• 1 tsp paprika
• Salt & pepper to taste
• 1 cup broccoli florets (steamed or lightly blanched)
• 1 small sweet potato, sliced & roasted
• ½ cup chickpeas, roasted (with a pinch of cumin)
• ½ cup mushrooms, sautéed
• ¼ cup cashews
• ½ cup shredded beetroot
• A handful of lettuce or mixed greens

Fueling your body with whole, nutrient-dense foods—like the variety in this nourish bowl—gives you the energy and resilience you need to thrive.

Did you know the Authentik Wellness platform includes a growing library of nutritionist-approved recipes? 🫐

Ingredients:
- 1/2 cup rolled oats
- 1/2 cup Greek yogurt (unsweetened)
- 1/2 cup milk (dairy or plant-based)
- 1 tablespoon chia seeds
- 1 tablespoon honey or maple syrup (optional, for sweetness)
- 1/2 teaspoon vanilla extract
- A pinch of salt
- Mixed berries (e.g., strawberries, blueberries, raspberries) for topping
- Nuts or seeds for garnish (e.g., sliced almonds, pumpkin seeds)
- Fresh mint leaves for garnish (optional)

In a jar or an airtight container, combine rolled oats, Greek yogurt, milk, chia seeds, honey or maple syrup (if using), vanilla extract, and a pinch of salt. Mix the ingredients thoroughly until well combined. Seal the jar or container and refrigerate overnight or for at least 4 hours. This allows the oats to absorb the liquid and soften.
