Foraged fire cider. So enjoyed making this botanical tonic - let’s see if it keeps me well through the winter! Foraged ingredients include: rosehips, hawthorn berries, birch poly pore, rosemary and sage. With the addition of star anise, peppercorns, root ginger, garlic cloves. All steeped in apple cider vinegar.

The green ‘islands’ on these beech leaves each have a wiggly line running through them. The wiggle is made by the larva of a moth which lives inside the leaf and delays the onset of autumn by helping the leaf produce a hormone to keep it green. In this way the larva prolongs its stay inside its tiny home until its ready to pop out and live its life in the big wide world!
