We’re excited to welcome Dr Josh Smalley, synthetic organic chemist, science communicator and Great British Bake Off finalist, to Chemistry in Action in Manchester on 3 December 2026.

In “Under the lens: the edible chemistry of baking”, Josh will take students down to the molecular level to reveal the hidden chemistry behind familiar foods, from fluffy bread to glossy meringue.
Students will explore how proteins and sugars change as ingredients are mixed and heated, and discover how these molecular transformations control texture, rise and the formation of flavour.

It’s a brilliant way to show KS5 students that chemistry is not confined to the lab. It is happening in the foods, processes and transformations they encounter every day.
