Wild kimchi and Lacto-fermentation time has come round! Give your immune system and taste buds a boost and sign up for one of my short courses. This is also a great way to preserve food without modern technology.

See ticket links on events above for details. Let's get fermenting!

Winter BushMoot is great fun...me and Mart had a great time there last year but didn't make this year. There's a lot of wild meat prep - vegans be warned! There's more foraging going on at the Summer BushMoot.

Great place to start if you're interested in shamanic use of plants. Here Gary Nabhan discusses the history of mezcal and tequila. Did you know that mezcal is probiotic, like kimchi?!

Grab your salt and lime — it's time to dive into part 1 of " , and Magic Toads: A Conversation with ethnobotanist Gary Nabhan," OUT NOW!

First fresh greens of the season - Chickweed (Stellaria media), Lords and Ladies (Arum maculatum) EDIBLE ROOT ONLY WHEN THOROUGHLY COOKED, Jelly Ear Mushroom (Hirneola auricula-judae).

Jelly Ear was also known as Jew's Ear, but in these days of political correctness, we now call this delicate edible by how it feels - like Jelly! Here my son shows off his foraging know how. It's tastier in miso soup however.

Track & Sign Course with Pippin & Gile 15/12/2023

Here's some pics from when I went on a Track and Sign course with Pippin & Gile in October. Tracking is learning about the footprints of animals. Sign is other markings and evidence they have made - which includes a lot of poo! Muntjac Deer skull Our tutors Jason and Lizzy took us to a badger sett and trails used by foxes and rabbits....

Raw Heart Healthy Rosehip & Haw Berry Leather 30/11/2023

I thought I'd experiment with adding the raw puree from rosehips into a fruit leather. You can add a ratio of 50% soft tasty fruits to 50% crabapples or hawthorn berries. Raw rosehips contain about 5 times more Vitamin C for their weight than an orange. If you cook them, the Vitamin C is boiled off. They also taste amazing, like an orange got married to a tomato!...

How do we clean our teeth when far from plastic and paste containing fluoride? I'm fresh from research for Backwoods Home and Bushcraft Magazine on this. It's been great fun finding out how to make soap, kitchen scrubbers and tooth paste from wild plants. TWIG TOOTH BRUSHES I made twig tooth brushes out of various edible woods. Hazel was the best....

King Of Edibles..The Cep 15/11/2023

Scored big on a walk across the heathland and woods today. Under the craggy branches of an Oak stood a proud Cep, or Penny Bun (Boletus edulis). Ceps are fairly easy to recognise. They are in the Bolete family. Most of the Boletes (but not all) are known by their pores under the cap. This looks like a sponge....

Risotto time...Field Parasol (Macrolepiota procera), Monks Head (Clitocybe geotropa) and Clouded Agaric (Clitocybe nebulosa). Clouded Agaric may disagree with some people. I've eaten it before and it was fine.

Monks Head/Trooping Funnel troops in a line like soldiers. It looks a bit like a monk's tonsure with a bump (umbo) in the middle of the cap, a stout stem and decurrent gills with no ring or volva.

Fungi Foray @ Linslade Woods & Plantation Woods 09/11/2023

This Mon in November I hopped out in the brilliant autumn sunshine...then submerged myself in the gloom of the dampest part of the wood. My mission - to scout out fantastic fungi. These inedible but pretty mushrooms above were found on Rammamere Heath, which is acid heathland and grass. The Earthballs (Scleroderma) on far right look a bit like…...

Witches Garden @ Blue Lagoon 02/11/2023

After my wild swim with the Blue t**s last week, I noticed several plant members of the Witch's garden growing around the car park. Methinks somebody has done some secret sowing... (Probably someone whose Mum won't let them keep it in the house.) Here's what I found: TO***CO (Nicotiana) The To***co plant is the most socially acceptable ally here. Easily recognised by its trumpet like white flowers, though they can be pink or a few other colours....

Make Your Own Conker & Ivy Soap 26/10/2023

It's not just food you can get out of our native plants. Stuck for soap or laundry detergent? Here's two plants you can find in most places that will sort you out with soap. Horse chestnut and Ivy both contain saponins. These are technically mild poisons. The plant makes them to prevent you eating it. As anyone who's ever had their mouth washed out with soap as a child knows, saponins taste horrible!...
