This weeks food is courgettes!!
I am not a massive fan of this veg but in with the chicken , sweet potatoes etc it’s all good

Courgettes (zucchini) are a very nutritious, low-calorie vegetable. Here are their main properties:

* 🥒 Low in calories – roughly 17 kcal per 100 g.
* 💧 High water content – around 94%, helping with hydration.
* 🌿 Good source of fibre – supports digestion and bowel regularity.
* ❤️ Heart-friendly – provides potassium, which helps support normal blood pressure.
* 👀 Contains vitamin A/carotenoids – important for normal vision and immune function.
* 🛡️ Provides antioxidants – including lutein and zeaxanthin.
* 🦴 Contains vitamin K and magnesium – involved in bone and normal body functions.
* 💪 Some vitamin C and B vitamins – supporting immune function and energy metabolism.
* 🍽️ Very versatile – can be grilled, roasted, stir-fried, spiralised or eaten raw.

For fitness: courgettes are particularly useful because they’re filling for very few calories, so they’re an easy way to add volume to meals without adding much energy.

I’ll be roasting it with some onions today ready to add volume for my salad
