My lamb and aubergine biryani, took me back to Hyderabad !!! The aromas were divine, with the richness of the tender lamb and the whole spices and saffron scent mingled with the caramelised onions and herbs … 🤤🤤🤤

What a lovely evening with and her family 🙏🏽🥰👊🏽😋 where I got to taste some delicious Pakistani food 🫶🏽 So great to eat home cooked food and get to hear her story and her passion for cooking and teaching others about her native cuisine. If you live in the Lydney area (or even if you don’t 😜) you need to check out and book on her cookery days and or pop up events … you will not be disappointed and like me enjoy such culinary delights as lamb karahi and chicken biryani and homemade naan 😜😋🙌🏽

Aloo gobi is a popular dish in many Indian restaurants … It’s a fave of mine and one which is quick and easy to create, and you can mix it up by adding other vegetables too 💪🏽👊🏽. You can substitute cauliflower for sprouts for a festive alternative this Christmas 🙌🏽

The humble okra - ladies fingers- bhindi -
I’m a BIG fan. Not only is it super quick and easy to cook, it also tastes devine 😋🤤🥰
I love eating with a few freshly made chapattis and fried egg 👊🏽😜🥰
Here’s my recipe to try :
Stir Fried Okra
Ingredients:
Large handful of fresh okra washed then cut into thick slices
1 med onion sliced
½ tsp. turmeric
1 tabs cumin seeds
1/2ts chilli powder
1 tsp. ground coriander
1 tsp. garlic & ginger paste
Salt to taste
Fresh coriander to garnish
2 tbsp. rapeseed oil
Method of preparation
Fri the onions until golden, then remove from pan
Fry cumin until it releases a wonderful aroma
Add rest of the spices and garlic & ginger paste and stir well
Add the onions and the okra and keep stirring all the time to
combine all the ingredients.
Add a splash of water if it starts to stick.
When okra is cooked and tender it’s ready to eat.
Garnish with coriander and enjoy!

Kheema mehti- is real comfort food and so easy to cook. I love serving this with freshly made parathas. Kids love it too which is a win win 👊🏽💪🏽😜
The only ingredient you may not have in your store cupboard is the dried fenugreek (kasturi mehti) but you can easily source this online.
Try this recipe👇🏽
Kheema Mehthi for 10
Ingredients:-
1.5 kg mince beef
4 large onions sliced
Tin of chopped tomatoes or 6 fresh tomatoes
2 tbsp. pureed garlic & ginger
2 tsp chilli powder
2 tsp haldi/tumeric
1 tbsp ground coriander
4-6 tbsp of dried mehthi (fenugreek)
salt to taste
3 tbsp vegetable oil
Method :-
1. Fry the onions until golden brown in
oil
2. Add mince with garlic and ginger
puree and spices and fry for 5-8 mins,
until you can smell the spices combining
with the onions (add a splash of water to
stop from burning)
3. Add the tinned or fresh tomatoes and
mehthi and keep stirring
4. Check for seasoning and add more salt
if need
5. Lower heat and simmer for 5-10mins
6. When oil is separating from the
sauce, remove from pan and serve !
