What an amazing, emotional, overwhelming day! Despite getting very wet and cold on the start line I managed to stick to my plan and completed the course in 4hr44min. The atmosphere was incredible, with amazing support from the crowds, and having my family and friends to cheer me on made it extra special. Today I have very sore legs and a few blisters but it really feels like the months of training were worth it.

I'm really proud to have raised £1,645 so far for the National Autistic Society - this is their biggest fundraising event so it's fantastic to be part of that. Please check out my stories for the link if you'd like to donate.

I'm running the London Marathon!! On 23rd April I'll be tackling 26.2miles to raise money for the National Autistic Society.

This amazing charity offers support to autistic adults and children and their families. The advice and resources they provide are available with or without a diagnosis and can be hugely beneficial to families that are struggling to support a neurodivergent child or partner. They also do really important work to raise awareness of autism in the wider community and to increase understanding of the often overlooked issues facing late-diagnosed girls and women.

Post-run lunch!
I'm trying to increase my protein intake during my marathon training so eggs are featuring heavily at the moment. Scrambled eggs on toast with baby spinach is a great way to refuel, whatever you've been up to this morning!

Hi, I just want to let you all know that I have decided to take a break from the recipe boxes part of my business. I'm going to take some time to review where to take the business next, focus on my family and get training for the London Marathon (eek!)

I will keep posting recipes, hints and tips on my Instagram and pages, and I will continue to offer 1:1 sessions for tailored advice and support, please get in touch for more information.

Trying out new recipes - my lovely friend gave me the new cookbook 'One' for Christmas so I've been trying out some of the recipes on my family. So far they've mostly been a hit! Sausage pappardelle, pea and feta pasta, honey roast chicken.

Turkey soup - the best Christmas leftover dish! You can modify this recipe to use whatever you have left in the fridge. You can also make it up to the end of step 4 and freeze until you're ready to enjoy it. Let me know if you try this!

Turkey carcass
2 onions, quartered
2 carrots, roughly chopped
2 sticks of celery, chopped
2 chicken stock cubes
0.5 tsp peppercorns
Leftover gravy (optional)
2 handfuls rice
100g mushrooms, sliced
3 spring onions, sliced
2 tbsp fresh parsley, chopped

1. Strip all the meat off the carcass and reserve it.
2. Break up the carcass and put in a large pan with the onions, carrots, celery, stock cubes, peppercorns and leftover gravy.
3. Cover with water, bring to the boil and simmer for 2 hours.
4. Strain into a large bowl and leave overnight. It will set as a jelly. Scrape off and discard all of the fat.
5. Reheat the stock, adding the reserved meat and any you have been able to take off the cooked bones.
6. Add the rice and simmer for 10 minutes until the rice is cooked.
7. Add the mushrooms and spring onions and simmer for a couple of minutes before serving, scattered with the fresh parsley.

Beautiful, crispy roast potatoes - great at any time of year but especially with Christmas dinner!

I find the easiest way to make these is the day before - parboil the potatoes and roast in goose fat or olive oil until crispy. Cool on kitchen paper and keep in the fridge. On Christmas Day, reheat on a baking tray for 40 minutes, ready to serve up with the main meal.
