Ringing in Canadian Thanksgiving weekend with the most essential dish – pumpkin pie! We will be celebrating Thanksgiving tomorrow, but just to make my life that much easier, I’m prepping this beauty today. Here is my full proof, sweet shortcrust pastry recipe. The secret to any good pastry recipe to make sure all your ingredients are cold. It even helps if your hands are cold! It just makes it a whole lot easier to work with the pastry, roll out the pastry. When a lot of people mention having issues with pastry, it tends to be because your ingredients are not cold enough. 250 g plain flour
150 g unsalted butter
2 tablespoons castor sugar
A pinch of salt
One medium egg
One heaped tablespoon of buttermilk/plain yoghurt
To start, place your flour, sugar and salt into a bowl. Add your cold butter, preferably this should be cut into small pieces. Rub the butter into the flour until the mixture resembles breadcrumbs or until you grab a piece of the mixture and it holds its shape really well. Make a well in the middle, crack in your egg and add your buttermilk/plain yoghurt. Bring this all in together with your hands or with a fork, and shape into a ball. Place in the fridge to chill for at least an hour. Roll the pastry out onto a wildflower surface, and that’s it! Tomorrow I will share my recipe for the actual pumpkin pie filling.
