Gluten-free brownies 14/01/2022

Happy New Year everybody! We always love to see some fresh faces at the start of the year, and you are welcome to join us!
Here is a tried and tested recipe that we love from BBC Good Food for GLUTEN FREE BROWNIES !! 😍 https://www.bbcgoodfood.com/recipes/gluten-free-brownies

Ingredients
250g unsalted butter, cubed, plus extra for the tin
250g dark chocolate, roughly chopped
4 large eggs
300g golden caster sugar
½ tsp vanilla extract or paste
100g gluten-free plain flour, sieved
60g cocoa powder
½ tsp fine sea salt
150g milk chocolate, roughly cut into chunks

Method
STEP 1
Heat oven to 180C/160C fan/gas 4. Butter a 30 x 20cm non-stick tin with butter and line the base with non-stick baking parchment.

STEP 2
Fill a small saucepan a third full with water, bring to a simmer and put a snug-fitting heatproof bowl on top of it. Add the butter and chocolate and gently melt over a low heat, stirring occasionally. Be careful not to let it catch and burn on the bottom. Remove from the heat and leave to cool a little.

STEP 3
Beat the eggs and sugar together using an electric whisk for 8-10 mins or until thick enough to leave a trail. Gently fold through the cooled melted chocolate and vanilla, followed by the flour, cocoa and salt. Finally, fold through the chocolate chunks. Pour the brownie batter into the lined tin, place in the centre of the oven and bake for 30-35 mins.

STEP 4
Leave to cool a little in the tin before cutting into 12 squares.

Hey guys! Just wanted to share this fantastic easy dinner recipe for delicious stuffed peppers which is also perfect for meal prep!!

Ingredients
1 1/2 pounds extra-lean ground beef or Quorn mince
1/2 cup diced onion
1 Tbsp. minced garlic
1 cup frozen corn
1 cup cooked rice
14 oz. can chopped tomatoes
1/4 cup taco seasoning (make sure it's GF)

on the serving day:

6 large bell peppers
1/3 cup shredded cheddar cheese or mozzarella

Instructions

1. Cook the rice and set it aside to cool.

2. Brown the beef or Quorn until no longer pink on the stovetop. Add the onion and garlic. Stir in the other ingredients, including the rice. If making into a freezer meal, add this mixture into a large resealable bag, remove the excess air, and freeze. On the day of cooking, take it out of the freezer and thaw.

3. Wash and cut the tops off the bell peppers and seed them. Fill each one with the filling. Sprinkle each with cheese. Place on a greased cookie sheet with a rim or baking pan and bake at 350 degrees for 35-40 minutes.

Here at the coeliac society, we want to raise awareness of all symptoms of coeliac disease. Most common are bloating, stomach cramps, extreme sickness, diarrhoea, constipation, anaemia and neurological symptoms.
These neurological symptoms such as loss of balance and of coordination are very unlikely to be picked up on by doctors as a symptom, but with awareness comes greater diagnosis rates.

Hi everyone, just wanted to share with you all that we are a very inclusive society and we have always been open to anyone joining us despite age, gender, s*xuality, race etc.

All of our socials come with a no-pressure element and a major part of our society's philosophy is looking out for each other. One of the steps we have taken towards this ethos is we have decided to elect an inclusivity representative to our board. Excited to share that our spreadsheet is now available for editing!!

Please feel free to contribute any restaurants, cafes or bars that you have visited. All experiences are useful as knowing where has good or bad gluten-free options are invaluable to coeliacs and even friends to those who are coeliacs as the struggle to pick a restaurant or get a takeaway is real!

Also if you let us know if anyone has any problems editing or accessing the spreadsheet that would be much appreciated.

Just use your age and s*x to track how many units you are allowed and then decide which pasta, bread, flour, cereal and pizza bases you would like!
You can do this once a month and food usually takes around 5 days to arrive. Happy ordering :))

Starting uni this year or new to living in Scotland?
FREE GLUTEN-FREE PRESCRIPTIONS ARE AVAILABLE TO ALL DIAGNOSED COELIACS!!!!

This is a little talked about thing in Scotland, and I never knew about it until the president, Carys, told me. But in the Coeliac Society, we want to ensure that everyone knows about these services that honestly make so much of a difference to our student budget. Pasta, bread, oats, pizza bases, crackers, cereal and xantham gum are all available :))

Here are a few steps to get your free food:
1) Register with a doctor near your accommodation - this is usually a really easy online form
2) Get a doctor's note confirming your diagnosis - Just ring up the reception and they will have it done in a few days, you don't have to do any work
3) Find out your nearest pharmacy that deals with gluten- free prescriptions - this just requires a couple of phone calls, no face to face interactions needed!
4) Take your doctor's note to your pharmacy and they will give you a prescription order form. It is quite straight forward but there is a lot of choice. We will do a follow-up post about filling in your form soon.
5) Deliver your form back to the pharmacy (form can also be emailed electronically)
6) Wait for your order to be delivered to the pharmacy and go and collect - take lots of bags!!

If you have any questions, please just comment or pop us a message. We know this can seem a little complicated because it is all off your own back, but honestly it has been vital to our food and budget at uni
