Slow Cooker Supercharged Satay Chicken

**Ingredients:**
- 6 chicken thigh fillets
- 3 tbsp crunchy peanut butter
- 2 tbsp soy sauce
- 1 tbsp red curry paste
- 200ml coconut milk
- 1 tbsp brown sugar
- 2 garlic cloves, crushed
- 1 tsp grated ginger
- Juice of ½ lime
- Chopped peanuts and coriander, to serve

**Method:**
Settle the chicken thighs into the base of the slow cooker. Whisk together the peanut butter, soy sauce, curry paste, coconut milk, brown sugar, garlic and ginger until smooth, then pour this rich sauce over the chicken. Cover and cook on low for 7 hours, or on high for 4 hours until the chicken is tender and easily shreds apart. Stir the sauce well before serving, then squeeze over the lime juice for a fresh, zingy lift. Scatter with chopped peanuts and coriander, and serve with steamed rice or noodles.

Slow Cooker Hearty Beef Vegetable Casserole

**Ingredients:**
- 600g diced stewing beef
- 2 potatoes, chunked
- 2 carrots, chunked
- 1 parsnip, chunked
- 1 onion, chopped
- 2 garlic cloves, crushed
- 400g tin chopped tomatoes
- 300ml beef stock
- 1 tbsp plain flour
- 1 tsp mixed herbs
- Salt and pepper, to taste

**Method:**
Toss the beef chunks in flour until lightly coated, then tumble them into the slow cooker along with the potatoes, carrots, parsnip, onion and garlic. Pour over the chopped tomatoes and stock, sprinkle in the mixed herbs, and season generously with salt and pepper, giving everything a good stir to bring it together. Pop the lid on and let it cook on low for around 8 hours, or on high for 4 hours until the beef turns fork-tender and the vegetables have softened right through. Give it a final stir and serve piping hot in deep bowls with crusty bread.

**Ingredients:**
- 4 pork shoulder steaks
- 1 onion, sliced
- 2 garlic cloves, crushed
- 200ml chicken stock
- 2 tbsp Dijon mustard
- 1 tbsp brown sugar

- 1 tsp smoked paprika

**Method:**
Lay the sliced onion across the base of the slow cooker and rest the pork steaks on top, seasoning generously with salt and pepper. **Ingredients:**
- 600g chicken breast, cubed
- 1 red pepper, chopped
- 1 green pepper, chopped
- 1 onion, chopped
- 227g tin pineapple chunks (with juice)
- 4 tbsp tomato ketchup
- 2 tbsp soy sauce
- 3 tbsp brown sugar
- 2 tbsp rice vinegar
- 1 tbsp cornflour mixed with water

**Method:**
Tip the chicken, peppers and onion into the slow cooker and give them a light stir to mix. In a bowl, blend the pineapple with its juice, ketchup, soy sauce, brown sugar and vinegar, then pour this over the chicken mixture. Cover and cook on low for 7 hours, or on high for 4 hours until the chicken is cooked through and tender. Blend in the cornflour paste towards the end of cooking to give the sauce a lovely glossy thickness. Spoon over boiled rice and serve while wonderfully hot.

- 500g beef sausages, sliced
- 500g baby potatoes, halved

- 1 tin baked beans
- 1 tin chopped tomatoes

**Ingredients:**
- 8 lamb chops
- 1 tbsp olive oil
- 1 leek, sliced
- 3 garlic cloves, crushed
- 2 tbsp balsamic vinegar
- 1 tbsp honey
- 250ml lamb or vegetable stock
- 1 tsp dried mixed herbs
- Salt and pepper, to taste

**Method:**
Warm the oil in a frying pan and sear the lamb chops for a minute or two on each side to give them some colour, then transfer into the slow cooker on top of the sliced leek. Whisk together the garlic, balsamic vinegar, honey, stock and mixed herbs, then pour this over the chops, seasoning well with salt and pepper. Slow Cooker Potato and Leek Soup

**Ingredients:**
- 4 medium potatoes, peeled and cubed
- 3 leeks, washed and sliced
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1.2 litres vegetable or chicken stock
- 80ml single cream
- 1 k**b of butter
- 1 tsp dried thyme
- Salt and cracked black pepper, to taste
- Crusty bread, to serve

**Method:**
Warm the butter in a small pan and gently sweat the leeks and onion for a couple of minutes until they start to soften, then tip them into the slow cooker with the potatoes, garlic and thyme. Cover with the stock, pop the lid on, and let it cook on low for around 7 hours, or on high for 4 until everything is tender enough to mash easily. Blend directly in the pot with a stick blender until silky smooth, then swirl through the cream. Adjust the seasoning, ladle into bowls and serve alongside crusty bread.
