Our weekly baking clubs are back and, this week, we were taking inspiration from the classic American treat, Strawberry Shortcake.

Despite the name, traditional strawberry shortcake isn’t actually a cake at all – it’s made using a lightly sweetened biscuit… a close cousin of a well made British scone.

Our version is filled with fresh macerated strawberries and a whipped Chantilly cream, before being dusted with icing sugar and served in slices.

This half term we’re celebrating summer berries coming into season and this was the perfect first bake to kick us off - our bakers all did a fantastic job and the results looked every bit as good as they taste!

VINTAGE LAMBETH CAKES

Thanks to my lil’ social media hiatus, I have a huge backlog to share with you all… starting with one of the most iconic decorating styles in cake design – Vintage Lambeth Cakes with their layers of ruffles, swags and shells.

This gorgeous group joined me last month to explore some of the history behind these gorgeous cakes, before having a go at creating these absolutely stunning showstoppers!

Can you believe… some of them had never even tried piping before?! 🤯 They should all be incredibly proud of what they achieved! 👏🏼👏🏼👏🏼

AND WE’RE BACK!

My apologies for the radio silence of late... 😉 …I just took a little unscheduled break from the relentless grind that is social media.

However, I can’t think of any better reason to return than to share the fabulous results of yesterday’s Piped Buttercream Flowers class!

Yes, yesterday saw another gorgeous afternoon of buttercream florals here at the Cake School.

We worked our way through chrysanthemums, roses, hydrangeas and tulips, along with plenty of leafy foliage, and can you believe that most of the group had never attempted piping flowers before?! You would never know it from the stunning results they produced. 😊

Thank you all for a thoroughly brilliant afternoon.

BREAD BASICS 101

One dough, but two very different results… a proper crusty loaf and the softest little dinner rolls.

And even a cheeky soda bread on the side, because why not?!

Yesterday’s Bread Basics 101 class was all about what happens when you tweak the how, not the what and honestly, the results speak for themselves.

As always, everyone did an absolutely cracking job… and the Cake School smelled like a dream. 🤤

S’MORES COOKIES!

They might not be the prettiest bake we’ve ever made, but they might just be one of the tastiest - well, based on the responses from our bakers… 😋

Yup, in our After School Clubs, Home Ed sessions and Weekly Bake Clubs this week, we were whipping up some delicious cookies, packed full of milk chocolate pieces, gooey marshmallow and biscuity chunks…

We spent an absolutely gorgeous Sunday helping the lovely Emma celebrate her hen party with her dearest friends…

They took part in a private version of our ‘That Baking Show Experience’ where we revisited Paul Hollywood’s Fig Rolls from series 10, episode 2.

They all did so incredibly well that it was almost impossible to choose some winners, but we managed it in the end… 😅

Thanks for including us in your special day, Emma and co - we hope your enjoyed the rest of the day’s activities!

INTRODUCTION TO PIPING

A huge thank you to this lovely bunch, who joined me on Saturday for an afternoon of buttercream piping… ☺️

We started by whipping up some perfect-for-piping buttercream and colouring it with our favourite ProGels from Rainbow Dust Colours. Then we explored a carefully chosen selection of piping tips and some of the different techniques they can create.

Finally, everyone put their new skills into practice on their cakes and cupcakes, before finishing them off with some ‘thoughtful’ sprinkles (iykyk).

I think the results speak for themselves, but feel free to zoom in and take a look for yourself… 😉
