Life is beset with limits, the outcomes we pursue uncertain. Yet we often live like it isn't. The result? We stress ourselves out trying to do too much to impossible standards, fail to appreciate the small pleasures more immediately available to us because we're so focussed on the future, manage our time poorly, and subsequently accumulate a ton of regrets.

Far better to do as best-selling author Oliver Burkeman recommends and embrace your finitude. Read my latest blog post 'Why embracing your finitude may be the key to a better life' for a thought-provoking discussion on how doing exactly this can enable you to develop a more resilient, pragmatic, approach to life with potential to greatly improve it as a result.

Yes, yes, yes! I personally love beans and pulses and have made them an important part of my diet after discovering how much the world's longest lived people eat them. They are so much healthier than carbs such as white rice and pasta and there are now so many great recipes for them, favourites of mine being The Bold Beans Company's recipe for Butter Bean Putenesca and Meera Sodha's Iraqi White Bean stew. I add black beans to white rice to up its nutirional value, ditto canellini beans to risotto, and regularly accompany meals with a portion of beans such as mixed beans in vinaigrette, with some added garlic and bouillan. Delicious, nutritious, easy to prepare and affordable, they really are a win-win-win. Check out my own recipe for Lemony Smoked Mackeral beanotto on my Blog too.

So here is yet another great, healthy, nutrious, vegetarian recipe from the brilliant Rukmini Iyer. I made them last night and they were delicious, all from only five ingredients. I'm confident even somebody not keen on apples will like this because the apple flavour is very very subtle. I reckon hard conference pairs would work just as well. I would never have thought of blending mayonnaise with Greek yoghurt. The only thing I added to the dip was some dill. You could probably cook these fritters in an air fryer incidentally (which would reduce the risk of burning them).

Rukmini and her peer Meera Sodha (who also writes for the Guardian) are turning out some of the best recipes in the UK currently IMO and doing a brilliant job of proving just how tasty vegetarian food can be (though both have some recipes that include, or can include, meat).

These warming and filling fritters are a hit with all the family, and perfect for a lunch platter or winter dinner

The sun has come out here after a much missed absence but when there's a full moon and a clear night you'd be forgiven for confusing the two. Here at Grebe beach, a 15 minute drive away, the only time you'd wish the moon away is when you want to experience the bioluminesence which is currently making night swims magical. Why not come and experience it for yourself? Whether for a B&B or retreat I'd be delighted to welcome you. But don't delay, the bioluminesence will probably finish in a few weeks.

Your environment can often be a source of little teachings about life hiding in plain sight. One useful teaching is that even if you or your dreams take a long time to come to fruition it’s better they do than not at all and pay no heed to being late. If you’ve something positive to offer the world time will always be right and your contribution will always be appreciated. This I’m sure is the hidden wisdom my strawberry plant is passing on to us, producing but one perfect strawberry the first week of autumn, a late contribution that given the weather now, could not be more welcome.

During my run this morning I had just completed the first of three climbs and ascents of a notorious flight of 113 steps when what do I spot on the side of a parked black car but an adult stick insect, the first I've ever found (having only come across the babies in my garden). Mark to the rescue! I carefully collected it and after giving several interested passer-by a mini brief on these beautiful non-native but happilly adopted insects (only found in the south west), I ran carefully with it cupped in my hands to a near by park where I deposited it in a tree considerably improving its chances of survival.

So why am I posting this here? Becaues the things that make life worthwhile don't have to be big, they can be small and unexpected, from having a chat with a neighbour to helping somebody with their shopping.

Finding and rescuing this stick insect has made my week. What small random occurance has made yours?
