ππΎ TEN MONTHS IN THE MAKING: MY SOURDOUGH MISO IS READY πΎπ
Last year at the .festival Sourdough Exchange in Bristol, I got to spend time with and came home with a jar of her sourdough miso paste β a little piece of her magic to bring back to Exeter.
Nothing in this bakery usually goes to waste, so I took a leftover One Mile Bakery sourdough, left it to go a bit stale, soaked it down and built my own miso: Vanessa's miso paste as the starter culture, koji rice, chickpeas, and salt.
Then⦠I waited. And tasted. And waited some more. Checking in every few months, watching the flavour deepen and change with the seasons.
Ten months later, a few days ago, it was finally, unmistakably right. Deep, savoury, complex - everything good fermentation rewards you with if you're patient enough to let it happen on its own time.
It's in the fridge now, and I've potted up a few small jars for the people who've been asking to taste it along the way. Slow food and nothing wasted!

I'm Boudicca β baker, teacher, and the one-woman show behind One Mile Bakery Exeter, a microbakery and baking school run right out of my home kitchen in the heart of Exeter.
Since 2018, I've been baking fresh, artisan bread for a small circle of loyal subscribers and hosting small, warm, hands-on baking classes that bring people together around the table. Think tangy sourdough loaves, seasonal focaccia, and lots of joyful, bready bakes - all handmade, often with local ingredients and always with love.
If you're new here: welcome! I'm so glad you've found your way to my little corner of the internet. Expect behind-the-scenes bakes, class updates, and probably more flour-dusted photos than anyone really needs. πβ¨

πΎ Lammas, a day late (bear with me!)
I'll be honest - I meant to bake yesterday, but a little bit of minor surgery in the week meant that my body had other plans! So, I'm marking the first harvest festival a little bit behind schedule this year. Better late than never, and if anything it feels fitting: Lammas is about slowing down and honouring the wheat, and this week that's exactly what I've had to do.
To mark it, my loaves this weekend:
π A yeasted white, dark rye, and wholemeal dough made with organic stoneground flour πΎ
πΌ to one loaf I added oats and calendula petals - harvest and sunshine baked right in
Lammas was traditionally when the first bread of the new harvest was baked and given thanks for β a pause before the year tips into autumn. This Sunday felt like the right moment to do exactly that: slow right down, get flour on the hands, and bake enough for the week ahead.
However today's shaped up for you, I hope there's a little space in it to slow down too.

π«Wild Blueberry Seeded Sourdough
Deep purple, a naturally sweet-tart hit of wild blueberry, and a proper seeded crunch β this one's been a joy to make.
Made with organic stoneground white and wholemeal flours, long-fermented and folded through with:
π« freeze-dried wild blueberry powder
π» sunflower seeds
π pumpkin seeds
β½ sesame seeds
πΎ golden linseeds
The blueberry powder brings colour and flavour without any of the sogginess you'd get from fresh fruit in the dough β plus a good boost of polyphenols alongside all that fibre from the seed mix.

This week's loaf: wild poppy and spelt
Look closely at this week's crust and you'll spot something a little different β real wild poppy seeds, smaller and darker than the standard seeds you'll find in most shops.
These turn up in organic cereal fields and here they become a quiet bit of biodiversity, baked right into your loaf.
This one's built on some spelt flour too, and proved in a new-to-us set of loaf tins β so if the shape looks a little different this week, that's why. Same long fermentation, same care, just a slightly new shape.

Todayβs subscriber loaves were inspired by my daughter. On her 11th birthday I made these loaf in celebration and she had wanted them again for her 13th birthday, which is today. Delicious white bread with tonnes of rainbow sprinkles from GET BAKED

Today's loaf is a celebration of British grain and seed provenance! I've blended Shipton Mill and The Apricot Centre white flours with Meadow Blend No. 2 from the The Sourdough School β a beautiful mix that brings real depth and character to the crumb.
I've boosted it further with Hodmedod's UK Pulses & Grains seeds
π± British-grown camelina seeds β high in fibre and protein
π± British-grown shelled h**p seeds β packed with omega-3 and omega-6 fatty acids
Every loaf is a little edible map of British growers and millers doing things properly. Long fermentation, thoughtful ingredients, real food.
