There’s something about just getting in the kitchen and knocking something up.

These are blondies using milk chocolate with salted caramel pieces.

I love this chocolate 💕. I buy it once a month. I usually nibble bits of it while at my desk, but today I decided it needed some elevation. How can you get higher than perfect? These babies. 🍫

What a day! ☀️ Some may say not a day for baking 🥵 but this strawberry shortcake 🍓is just the right blend of bake and no-bake. Top with vanilla ice cream and enjoy in the sun. You’ve earned it. 👏🏽👏🏽👏🏽

Happy Summer 🌤 my lovelies! I’m happy to announce that The Sweet Course is back on track for classes starting in August. I’m super excited that this Tropical Swiss Roll is the featured lesson.

The sponge is light and when it’s paired with fresh mango and condensed milk buttercream, the flavour and textures are amazing.

Will I see you in class? 👩🏾‍🍳

Coffee and a gorgeous carrot cake doughnut from this morning with friends! What an amazing place!

baking today! Sometimes things don’t go totally to plan, but it’s important to find out where you went wrong and keep it pushing! 💪🏾
These macarons were baked at too high a temperature so the colour is a bit muddled by browning. Lucky for me, it gives these macarons a more natural feel.

They are filled with white chocolate ganache and have a passionfruit centre so when you bite into them, it’s like a real egg. 🪺

Introducing the Apple-Almond Pumble! It’s got a sweet crust pastry topped with frangipane, homemade apple pie filling, and topped with oatmeal crumble. 🥧🍎

🧧Happy Chinese New Year! 🧧

I’ve created something special for the occasion. An Orange Slice. It’s an Almond Jocande sponge with layers of Orange Syrup, Orange French Buttercream and a Citrus Curd. It tastes like eating a fresh 🍊 Orange 🍊 🤯

Oranges are a popular symbol of good luck. The associations come from a similarity between the Chinese words for tangerine and gold, as well as a resemblance between the words orange and good luck. Oranges and tangerines are also a bright, vibrant orange, a happy color that's associated with good fortune.

Wishing all of you a Prosperous Year of the Tiger 🐅🧧🐅🧧

A huge thanks to for the wonderful puff pastry that she dropped by. 💕

In her honour, I’ve made Palmiers. They’re sooooo buttery and caramel sweet. Also very easy.

I rolled out the puff and gave it another turn with granulated sugar. After that rested, I shaped the palmiers with more sugar and rested them in the freezer for 15 minutes.
So simple and so tasty. 👏🏽👏🏽👏🏽🤤🤤🤤

First Mince Pies of the season! 🤶🏽🎄

NGL I totally cheated here. I used mature mince from Sainsbury’s and their pre-rolled butter puff pastry. Don’t be afraid to take advantage of the wonderful time saving products available to you during this holiday season. Now put your feet up and enjoy that warm mince pie with a glass of mulled wine. 🎄🎄

This weeks’ post is Christmas Afternoon Tea with my Ladies and . What a wonderful treat at the Caledonian Hotel . So many tasty things to eat and the service was impeccable. What a great start to the festive season!

I tried something new yesterday. 😀I made challah bread for Hanukkah.

I just noticed that Christmas is always foremost in everyone’s mind and always advertised. There are Christmas decorations, movies, and everything. But never see too many examples of the Jewish Celebration of Hanukkah or baking.

This bread is incredible! It’s soft and golden inside with a lovely dark crust. I put rock sugar on mine instead of sesame. Let me tell you, challah rivals any well made Panettone. It’s worth the wait and fun to braid. I did 4 stand here, but I think it needed maybe a tiny bit more proofing to keep more of the braid visible. It’s definitely worth a do-over. 😉

S’more’s Brownies
It’s a Marshmallow World!

These babies are made with homemade Vegetarian Marshmallow Fluff using Agar Agar. ☁️☁️☁️☁️☁️
I used my favourite American style brownie 🍫recipe so that they are still chewy and dense. The bottom is a digestive biscuit crumb that’s been baked with the brownie. To finish, I torched the tops for that caramel roast marshmallow flavour. 🔥

Happy Halloween my children! ☠️☠️
I’ve been in the kitchen sweating over the cauldron- calling on the Voodoo Priestess to help me make these bloody voodoo doll cookies.

These horrifying cookies are chocolate sugar cookies topped with blood red icing and sewn back together with black chocolate ‘thread’.

Darkly delicious ☠️💀☠️

Spiced Apple Cake with Salted Caramel Drip!

I know that I haven’t been on Instagram in a little bit, so I wanted to make my comeback a good one!

This cake contains 20 hour apples - slow cooked perfectly. Vanilla buttercream, and caramel all layered and topped with a caramel apple.

So tasty. So seasonal! 🍁🍂🍁🍎🍎🍎

Old Fashioned Sour Cream Cake Doughnuts! These are so easy to do. The cake doughnuts get a really bad rap for being heavy and dry. Not these. I’ve used a recipe from (Thanks, Bri!) they’re so fluffy and tender. I used my own Brown Butter and Maple Glaze for them. 😁😁😁🙌🏽🙌🏽🙌🏽

THIS. Ladies and Gents is a German Chocolate Cake. 🤤🤤🤤 It’s got nothing to do with Germany. It’s named after the guy who invented it, Samuel German.

It’s rich chocolate cake topped with a sticky caramel, coconut, and pecan frosting. It’s sooo good! It’s a great cake to kick off the fall baking season!

Ever wanted to know what a Lamington Cake is like? I’m here to tell you that it’s delicious! I thought that Pavlova was the best Aussie import until these cakes. Mine are flavoured with Black Currant Jam. So lovely with a cuppa. 🇦🇺🦘🇦🇺

“August always reminds me of The County Fair back home in Pennsylvania. These Funnel Cakes are a delicious tradition. You can top them with whatever you like but a thick dusting of icing sugar is essential! I’ve topped mine with strawberry compote and vanilla ice cream.”

Hi Instagram Fam. I’m going to get a bit serious here for a moment.

I was recently diagnosed with Primary Breast Cancer. I found a lump during a monthly self examination and after biopsy, it was found to be cancer. I was debating on posting this or not, but I wanted to start classes again in September and noticed that there were quite a few of my regular students asking about when classes were starting up again.
👩🏾‍🍳 I’m going to have a lumpectomy at the end of August and take time to recover and start radiotherapy and hormone therapy. So, I’m not sure when classes will begin again. I’ll definitely keep you all posted because I cannot wait to see you all again! I’ll still keep posting yummy things to inspire you all. I love seeing your bakes here too! They also inspire me. 🙌🏽🙌🏽☺️

Long story short, breast self examination saves lives and bo***es. 👏🏽👏🏽👏🏽Please check your cupcakes regularly! 🧁🧁There’s lots of information on it. So Google it! Men can get breast cancer too. Get familiar with your breasts.

❤️❤️f*ck 🖕🏽 cancer ❤️❤️

Today I’ve made an old fashioned Peach Cobbler. 🍑 It’s a classic Soul Food dessert from the American South. Here, I used some tinned peaches as I couldn’t find enough fresh or frozen fruit. My mother used to do the same. The top is a sweet ‘drop biscuit’ or Scone. If you’re short on cash want to make something delicious, tinned or frozen fruit is a great substitute. Serve with a scoop of vanilla ice cream for extra luxury.

These lovely pastries are called Kouign Amann. This French pastry is crispy, buttery, and soft inside. They are very similar to a caramelized croissant. They're made by placing butter and sugar inside the layers of the finished dough. I baked them inside muffin tins lined with butter and sugar to give them a beautiful golden brown colour. 😵

Wondering what to make for your next bbq? This dessert is simple and you can put it together in a snap. I made a simple butter pound cake. Once cooled, it’s sliced and grilled. If you some want to grill them, you can brown them in a pan with a little butter. Top with crème Chantilly and the fruit of your choice. Here I’ve topped with cherries and pomegranate. The browning of the cake takes this plain Jane cake to the heights of fabulous. Thanks for the idea ! When I saw it this morning, I need I had to try it!! Five ⭐️⭐️⭐️⭐️⭐️ would definitely recommend.

This weekend will give you lots of excuses to eat sweets. Tomorrow's World Emoji Day can be an inspiration for fun cookies and my personal favourite day on Sunday...World Ice Cream Day!! 🍨 It is no doubt the perfect dessert. So to celebrate this delicious treat I have created Ice Cream Tacos in two flavours: first ones are mango sorbet and white chocolate and the second ones are rich chocolate ice cream with dark chocolate coating. Both sprinkled with coconut, and macadamia nuts.
Ice Cream Day is your chance to really indulge without any guilt or shame, and while you’re at it, try coming up with your own flavours!
