An easy dish to have in the fridge ready to pop in the oven for dinner, or to freeze for later.
3 ways to adapt it...
1. Use quinoa instead of couscous for gluten free
2. Swap out the nuts & add cooked beans or other vegetables instead
3. Use chicken breast instead of salmon. You'll need to increase cooking time to approx 25mins.

One person's ordinary is another's extraordinary.
Clients sometimes lack confidence or have lost inspiration when it comes to food & cooking.
Just by cooking a few different dishes, using some different ingredients or cooking a dish in a slightly different way can spark renewed enthusiasm after a class.
The small class size also reduces the perceived stress of having to keep up with everyone else and there's also a huge sense of achievement with the finished dishes at the end of the day.
What did you do recently that left you with a real sense of achievement?

A group 'Bake off Challenge' is great fun!
The contestants all worked for the same company & were having some brain storming time away from the office for a few days.
My task was to create an activity that they could do for a couple of hours during a break.
Luckily there was more than 1 cooker and a lovely big table to work on.
As well as all making a technical challenge with minimal instructions, which was then judged last to first place, they all worked in teams to produce different types of savoury canapes, making a very nice lunch.

Ever faced with a rock hard avocado & needing to use it in a hurry?
Here's a wee trick to ripen it up super quick!
3 quick, delicious ways with avocado...
1. Mash with a fork, add in lime juice, coriander, spring onion, salt & pepper for delicious guacamole.
2. Keep avocado halves in their skin, drizzle with a little oil, balsamic vinegar, salt, pepper & a grating of Parmesan cheese. Grill for a few minutes until the cheese has turned golden. Eat with a spoon from the shell.
3. Mash onto toast & top with a couple of slices of crispy bacon & poached eggs.
