As cold as flu season approaches, it’s time to make an elderberry syrup to help boost your immune system. Elderberries our natures way of telling you it’s cold and flu season so why not make yourself a batch of this delicious syrup a kilo of fresh elderberries or dried 4 L of water 2 tablespoons of cinnamon 1 tablespoon of cloves (personal choice to add half a cup of hibiscus and half a cup of Goji berries.) and 1 kg of light molasses sugar you can just use brown sugar the Dalca will be the stronger the flavour. Remember to boil for 20 minutes and then simmer for at least half an hour so that you reduce it down to its best flavour. It’s important to boil for at least 20 minutes if not half an hour to get rid of any toxins in the seeds as these are not edible when they are raw You can use a cheese cloth to strain the bits out. I double strain it to ensure that there’s absolutely nothing with no residue left in the bottles once they’ve settled.
